Basic Crepes

I made these for breakfast today but halved the recipe for me and my hubby. After reading the reviews, I mixed the dry ingredients together, mixed the wet ingredients and then mixed the two. I also added 1/2 tbsp of sugar (for sweet crepes) and added an extra 1/8 cup of water to make the batter runnier. They cooked very quickly and they didn't break! :D. I managed to make 4. I had mine with lemon and sugar and my hubby had his with maple syrup. This is the 2nd crepe recipe i have tried and it is the BEST! Will definitely be making these again!

Crispy Fried Chicken

I wanted to try this recipe for some time now and today was the day i made home made fried chicken for the first time! I didn't follow the method of shaking the chicken pieces in a plastic bag (although simple i was sceptical about the even coating), so i dipped each piece separately in buttermilk (added hot sauce) and flour (added chilli powder) and left the pieces to sit for 2 hours. Some of the coating got stuck to my pan and as a result, the bottom of the pan got burnt and the chicken pieces didn't brown evenly but overall, i think it was a pretty good first attempt. Even with all the salt i added to the flour, it needed more when my hubby and I started eating. I will definitely use this recipe again whenever i make fried chicken, as it's so easy and will hopefully sort out the issue of the coating coming off.

Traditional Mashed Potatoes

Made this to accompany grilled salmon. Adjusted quantities since it was just me but did add a generous amount of warm milk, butter and salt. Very tasty and the texture is fluffy and creamy! Will use this recipe again when making mashed potatoes!

Emily's Famous Hash Browns

My hubby likes hash browns & this is such a simple recipe that I had to try it. The first time i tried this about a month ago, it was a disaster as the mixture wouldn't stay together due to the egg. Plus i didn't cut the potatoes fine enough so that was a waste. Yesterday evening (i thought i'd make them and then just heat them up in the morning), i left the grated potatoes aside to have dinner & they turned a horrible brown colour - yuck! I threw them away! What a waste! I was still determined to make these hash browns! So after dinner, I grated 4 small white potatoes, i didn't rinse them; just let the juices fall through the sieve and then squeezed the excess juice really well. I finely chopped 1/2 a small onion, added 1/2 tbsp of flour, i didn't add any egg, added salt, pepper, 1/4 tsp paprika, 1/4 tsp chilli powder and mild cheddar cheese (followed another reviewer). I made them into small patties, well i made them kind of rectangular, and since i couldn't be bothered to fry at 9:40pm, i grilled them for 20 minutes. My hubby said they looked good. I had them this morning and they are very tasty! My hubby was short on time, so took the rest with him to work. Next time, i'll make them into round shapes (i'm not particular but wasn't satisfied with the shape!) and add spring onions for colour! I gave it 4 stars because I omitted the egg and it's part of the recipe. Such an easy recipe that i remembered the ingredients without referring back to this!

Butternut Squash Soup II

I had 1/4 of a butternut squash left, wondered what to do with it, browsed around for ideas & used this recipe due to its simplicity & the positive reviews. I altered quantities as I just made it for myself and didn't use celery because I didn't have it. I dissolved 2 chicken stock cubes in water, softened 1/2 an onion and 2 cloves of garlic in some butter, added stock, then added leftover butternut squash & 2 small potatoes roughly chopped. When they were fork tender, I took half and pureed in a food processor & left the rest (as suggested by another reviewer) for some chunky texture. I added a dash of milk & also black pepper. There was enough salt in the stock cube, so had I added any extra, I wouldn't have been able to eat it! It was very tasty! This is the first soup i've made and it was so easy! So easy to remember that I didn't have to look at this recipe once while cooking either! I had half today & felt full, so will have the rest tomorrow! I live in Toronto & i sent a picture of the soup to my mum in England! She said it looks good and healthy! I'll definitely be making more soups and it was a lot tastier than the bought ones!

Quick and Easy Brownies

I've never made brownies before, but decided to give this a try end of last week and i'm glad i did because they're delicious and my husband loves them! He wants me to show him how i make it some time! I only used 1 cup of flour after reading other reviews and I used 1 teaspoon of honey instead of vanilla extract, as I didn't have any, plus being a Muslim, there may be ingredients in vanilla extract that may not be permissible for me to use. My only complaint is that despite baking it at 350 degrees Fahrenheit, it took 50 minutes to bake. Next time, i'll half the recipe since only me and my husband will be eating it (there were plenty of leftovers and there still are!), but it's a very easy recipe and i'm glad i found it! This is the first recipe i've tried out on here! Will hopefully try out more! Update: made this again today after a chocolate cake broke apart when taking it out of the cake tin (no idea why!), but halved the quantity and left out the nuts which made a big difference to the taste and texture! It was more chocolatey and fudge-like, whereas last time it had more of a cake-like texture. My brother in law said, 'oh my God this is amazing!' and he actually thought I made it differently! My husband hasn't tried them yet, but I know he'll prefer the brownies this time too, although he did love the ones with nuts as well. This one's definitely going in my recipe book!
