Classic Peanut Butter Cookies

This was a great and simple enough snack to prepare for a group meeting I attend every so often. I did make one adjustment. I added raisins which add a nice chewy contrast to any chunks of peanut that may not have fully melted during the baking process.

Avocado Feta Salsa

Everytime I make this dish for a get together it practically disappears in what seems like moments. I always have to quadruple the servings if everyone is to have a chance to try it. This was the first recipe I tried from this site and has been the catalyst for me trying new things out in the kitchen :)

Vegetarian Moussaka

This was an amazing dish! Planning on making it again for a date night but with more experience around the kitchen I should be able to shave off some of the time in preparing it. I did make a few changes. I used soy milk instead of cows milk and omitted the salt. The potatoes were not specified so I chose red potatoes. This way there was less peeling involved.

Broccoli and Tomato Bake

This dish was very good and surprisingly filling. I knew it was a hit when my boyfriend had a second helping (this guy rarely refills his plate). I used fresh tomatoes instead of canned and about a cup of tomato sauce. I added close to a 1/2 cup of the goat cheese. I will definitely make this dish again.

Vegan Split Pea Soup I

This soup is so good. I make it quite often. I made slight modifications to it though. I use 4 cups of vegetable broth and 5 cups of water. I dice up the potatoes and carrots and mix them in a bowl with the basil, black pepper and about 1/2 a tablespoon of canola oil and place them in the oven until browned. Then add this to the soup with the remaining ingredients after its been simmering for two hours.
