Vegan Split Pea Soup I
This soup is so good. I make it quite often. I made slight modifications to it though. I use 4 cups of vegetable broth and 5 cups of water. I dice up the potatoes and carrots and mix them in a bowl with the basil, black pepper and about 1/2 a tablespoon of canola oil and place them in the oven until browned. Then add this to the soup with the remaining ingredients after its been simmering for two hours.

Broccoli and Tomato Bake
This dish was very good and surprisingly filling. I knew it was a hit when my boyfriend had a second helping (this guy rarely refills his plate). I used fresh tomatoes instead of canned and about a cup of tomato sauce. I added close to a 1/2 cup of the goat cheese. I will definitely make this dish again.

Vegetarian Moussaka
This was an amazing dish! Planning on making it again for a date night but with more experience around the kitchen I should be able to shave off some of the time in preparing it. I did make a few changes. I used soy milk instead of cows milk and omitted the salt. The potatoes were not specified so I chose red potatoes. This way there was less peeling involved.
