Cheesy Sausage Zucchini Casserole

Reviewed: Aug. 11, 2009
My zuk and tomatoes from the garden are crazy so with that said I am constantly trying new things to use them up. This was perfect, with a few changes. 1st I didnt read through the whole recipe, like you should, before I started and when I saw 1hr cook time I decided to let it sit in the fridge and make the next night since I was short on time. I used ground Italian Turkey and mixed that with the zuk and tomatoes it was watery but was not the next night. Added some different seasonings per taste and then the next night through in a bag of Birdsey frozen brown rice put some mozarella in then on top with parmeson and more mozarella and a bit of cheddar. I cannot stand processed cheese! I did not measure but didnt use alot. It was pefect loved! Hubby thought a bit bland so added some salt, my 4yr old ate but protested (he does with everything) my 6 year old liked. Definately a keeper and next time might experiment a bit more with some seasonings.

Easy Garlic Broiled Chicken

Reviewed: Sep. 15, 2008
We just had these for dinner and I must say pretty good! I did a little differently. Same ingrediants but let marinate in the mix for awhile. The butter, however, did cool so became kind of like a paste when cooked. I rubbed the mix all over then barbequed. With the reamining "Paste" I microwaved until melted again and brushed on as cooking. By the way if you microwave mixture for 2 minutes you will burn the butter or it will splat all over the micro! Must be a typo. Very nice flavor which the kids even really liked so a keeper!

Russian Tea Cakes I

Reviewed: Dec. 11, 2007
I lost my grandmas recipe for these and was heartbroken as I make every year! This is it!!! The only thing I do different is roll warm right out of the oven it kinda puts a sugary coating on them. Then I let cool and roll again and sometimes a 3rd time. They look so pretty and even though every time I eat one I feel like a dog with peanut butter in the roof of my mouth they are the best!!

Storybook Gingerbread Men

Reviewed: Dec. 11, 2007
I'm really surprised on the reviews on this one! I've never made Gingerbread but the kids wanted too. I just took out of the oven a few minutes ago decorated one, ate it and they are awesome!!! I followed the recipe except I used butter flavored crisco for the shortning (its what I had) and added a pinch of nutmeg and cloves plus a little more cinnamon. Rolled between wax paper and the rolled great, cut great and came right off the pam sprayed cookie sheet just perfect! They are not real spicey which I like better and when the kids wake up from a nap they are going to decorate! I think these are a must try!!!!

Bottom Round Roast with Onion Gravy

Reviewed: Nov. 8, 2007
An absolute must make and cant wait to make again!!! We love onions and this just made the most awesome gravy in the world!!! The only thing I did different is my roast was 2 pounds, I used only 3 onions, added a beef boillon cube and a little water the other ingrediants I kept as is. Also I didnt have a dutch oven so in a deep sauce pan I let cook for about an hr then it just sat for several hours then finished cooking about another hour before dinner. so moist and melt in mouth. Just WOW! Thanks for the recipe!!!!!!!!!!

Pumpkin Muffins II

Reviewed: Nov. 8, 2007
Very good muffin and will definately make again! I had a few small fresh pumpkins from the garden and I needed to do something with them after the kids painted faces on for Halloween. I prepared the pumpkin and used the recommended amount pureed and I made them lighter with 1/2 cup applesause and no oil and egg beaters in place of the 3 eggs. Perfectly moist. I didnt have all spice so threw a little ginger in but I dont think I will do that next time. Their great but I can taste the ginger a little too strong. A must try and my 2 year old ate them so believe me that says a lot!!!!

Grandpa's Popcorn Balls

Reviewed: Oct. 31, 2007
I made these yesturday and this morning have had 4 for breakfast! I wanted a more carmely popcorn ball but these are really addictive, chewy and good! I used 4 bags of microwave popcorn and the liquid covered just perfectly and coated great. I followed recipe exact and I would give these 5 but the amount this makes just has to be off. I ended up with 30 huge size popcorn balls. 10 would have been more like it since the kids thought they were too sticky to eat except my 2 year old and I'm eating them like crazy. I'd make again but I would definately 1/2 the recipe or wait to take to some event not just for 4 boys.

Mom's Stovetop Pork Ribs

Reviewed: Oct. 22, 2007
Absolutely Perfect my husband couldnt stop talking about these and said they melt in your mouth!! My kids even ate them! I used boneless ribs. I was a little concerned about the oregano but it was fine. I did reduce the soy to 1/3 cup. Didnt have fresh cilantro or parsley so used dried cilantro and didnt have fresh limes just the fake juice one so squeezed a bunch into it. Also I stared these in the early afternoon boiled then turned off burner and they just sat in marinade for several hours. I will definately make over and over again!

Mom's Zucchini Bread

Reviewed: Oct. 5, 2007
I've made this soooo many times & just noticed that I have never rated so figured I better give credit where credit is due!! I'm making it into muffins right now my kids always eat them if I make into muffins! I always double the recipe and freeze muffins or bread. Never use oil; substitute applesause, cut down on sugar 1/2 cup and use 1 cup brown sugar in place of one of the cups of sugar. Soooo nummy the best!!

Plum Dumplings

Reviewed: Aug. 19, 2007
Mmmmmhnum!!! I have red plums from the neighbors tree and had already made so much plum muffins and bread thought I'd try this. My Hubby is from Germany and said they have something similiar but serve with warm vanilla sauce which I happened to come upon at IKEA sooo thats how we had them. Yes, there work and I think my dough was a little thick but they are very good and my hubby says its a keeper. The only thing I will do differently is put a little more sugar in the plum a sugar cube would work because they can be a bit tart and also with red plums you dont get as many.

Plum Quick Bread

Reviewed: Aug. 17, 2007
This is really good and I would give 5 stars if only it wasnt soooo moist. That might be my fault though as I used applesauce instead of oil. I made as muffins and a bread I actually prefer the muffins. The taste though is very nummy and after 2 batches of muffins and 1 loaf bread I made last night its all gone!! I'm going to make again this weekend but I think I will cut down a bit on the applesauce and maybe also a bit on the plumbs. So Made again today as bread and used no applesauce and no oil. Halved the flour with whole wheat and pureed the plums so not so chunky. Still very moist and so much healthier!

Baked Zucchini Chips

Reviewed: Aug. 16, 2007
Okay so the reviewer who said you should double dip them is right on. Also these on their own are kinda bland but then again who eats fried zucchini without a dip? These I think are no different. I made a cucumber Tzaki (dont know how to spell it) dip and my husband went nuts over these even my no veggie 2 year old ate one. We will definately make again but always with some sort of dip.

Sour Cream-Rhubarb Squares

Reviewed: Jun. 23, 2007
Definately a coffee cake instead of squares and definately needs more rhubarb but very nummy! My husband says definately a keeper! The only thing I did do differently is to remove the "skin" from the rhubarb. I didnt know that you needed to do that but my hubbie said your suppose too. I dont know but did and it was awesome!!

Raspberry Lemon Muffins

Reviewed: Nov. 5, 2006
Munching on one right now! Pretty good. Followed the recipe exact except use vanilla yogurt, applesauce instead of oil, fresh rasberries and threw some flaxseed in the batter for some additional fiber. Only thing is the bottom is just a tad "wet" around the edges(probably from the applesauce) but wanted them lighter in fat. Will definately make again.
