Roasted Butternut Squash Soup

Amazing! Only mashed/did not puree- and served it over a spoonfull of rice. Also- did not have cream so I sprinkled some crumbled goat cheese on top.

25-Minute Tunisian Vegetable Couscous

Definately double the spices and add garlic. Also, because it made so much, I did a "test" freeze of a serving. Just thawed and microwaved for lunch and it was just as good.

Vegan Red Lentil Soup

Really good. I added carrots and celery and used leftover roasted butternut squash. Definately use 1 Tbs of curry, not 1 tsp. Kept it thick and stew-like and served over rice.
