Chicken Tortilla Soup I
I didn't make the recipe as written after reading many reviews. I made some changes, and the soup is wonderful! Everyone in my family said it was really good - and that's a victory! Here are the changes: 1) used two cans condensed chicken broth, plus the juice from the baked chicken 2) did NOT add water 3) replaced oregano with 1 tsp. cumin 4) used only 1/2 tsp. chili powder 5) used one 14 oz. can diced tomatoes and one 10 oz can Rotel Mexican LIme & Cilantro - pureed in blender 6) Did not use hominy - didnt miss it 7) Added lime juice - didnt measure, but it was about 1 -1.5 tsp 8) Added about 1/2 cup plain yogurt at the very end - then let it simmer about 1.5 hours. Do NOT allow soup to boil once yogurt is added. This was so good - i will be making this again, very soon !

Pecan Pie Bars I
Loved this recipe. The thick crust adds a balance to the sweet filling. I followed the suggestions on using 1/2 white and 1/2 brown sugars, baked a little longer (about 40 minutes - did not rotate, I have a convect bake oven). I added 1 cup semi sweet chocolate chips to the filling. It turned out wonderful - the whole family loved it! (even those who don't like pecans) I liked that it did not taste overly sweet.

Flourless Chocolate Brownies
I'm giving this 5 stars, even though I made a couple changes. I usually look for recipe's with great ratings - otherwise I pass them up. I used almond meal/flour and had good results. Here are the changes I made: 1) Instead of 6 Tbls butter I used 2 Tbls butter and 1/4 cup canola oil; 2) used 1/2 cup honey instead of 3/4 cup sugar. I put in 3/4 cup chopped pecans (all I had) and added another 1/2 cup chocolate chips to the batter. I think they turned out great - love them with a cup of coffee! My DH likes dark chocolate but thinks these are a little too bitter. My kids love milk chocolate and think these are horrible! The texture is dense and moist.
