Cranberry Scones

This is a great base recipe. I made a few changes which is the only reason I have it a 3. Instead of nutmeg I used cinnamon, instead of cream I used a 1/2 cup of far free Greek yogurt. I did not add the nuts. I also cut the orange after zesting and used half of the juice. I just dropped spoonfuls onto the cookie sheet instead of shaping and cutting it. Amazing!!!

Ranch-Style Thighs

I only gave this 4 stars because I modified it a lot to make it low cal. I made 4 skinless boneless chicken thighs and total it was only 1180 calories for the entire dish. I used 1/2 cup Italian Bread Crumbs 1/4 cup Reduced Fat Parmesan cheese 2 Tbsp cornmeal 1/4 cup Fat Free Mayo 3 Tbsp of Italian seasoning (I wasn't sure using the mayo how much flavor it would have) Mix all dry ingredients in a large zip lock bag. I rolled the chicken in the mayo and then rolled it in the dry ingredients. I then placed the chicken on a cooling rack on top of a sheet pan. Someone in the reviews mentioned doing this to keep it all crisp. FANTASTIC IDEA!!! I cooked it for about 45 minutes and it was juicy and amazing. My 5 year old ate a ton and my husband asked why I didn't make more :)

Steamed Mussels II

Overnight Blueberry French Toast

I previously made this recipe exactly as is and LOVED it. However my 4 year old isn't a huge fan of blueberries so I decided to switch it up this morning. I used: Whole loaf of challah bread 2 pkgs of cream cheese 1 jar of yellow plum jam 10 strawberries chopped 10 eggs splash of vanilla spalsh of maple syrup 3/4 cup sugar I put the bread in the bottom of a 9x13 clear backing dish. I then mixed the cream cheese and jam together and microwaved it in 30 second intervals until it was soft enough to blend. Stiring in between each interval. I put the strawberries over the bread and then spread the cream cheese/jam mixture over the strawberries and mixed it all together in the pan. Then I combined the rest of the ingredients and poured it over the top of the bread mixture. I then put it in the fridge overnight. It was awesome! I put extra syrup on the side for my family to use if they wanted it but it didn't really need any.

Slow Cooker Chicken and Dumplings

This was really good but I did take a lot of peoples advice and made it my own. Super easy too which is awesome. I used: 2 cans of potatoes (I have never used canned potatoes before and they were great). 1 can of corn 1/2 a sweet onion chopped really fine 5 very small and thin chicken breasts 1 can cream of chicken soup 1 can cream of mushroom soup 1/2 cup of chicken stock 1/2 cup of milk Salt Pepper I used some other spices too but can't remember what. I cooked this for 3 hours on high in the crock pot. Then I took refrigerated biscuits (butter flavor) and cut them into 4th. I used a whole package spreading them out. I then pushed them all under the liquid so they were saturated and cooked on high for another hour. At that point I pushed then all under again, took the lid off and cooked for another hour. The meat was tender but not overdone and the biscuits being saturated made them taste more like dumplings.
