Red Velvet Cupcakes

Reviewed: Nov. 26, 2013
I have been using this cupcake recipe for about two years now, and I absolutely love it! Even people who don't like red velvet cake tell me how good it is. I make the recipe exactly how it is and it comes out perfect every time. I always pair it with a cream cheese frosting and it's great. Many people don't like that it is a "chocolately" cupcake, but that is what red velvet is. My friends mom is actually ordering a red velvet cake, and so I decided to make this recipe. I just pulled the first batch out of the oven at 25 minutes, and it was perfect! I'm so excited to make many more cupcakes and cakes with this recipe! Definitely one of my favorite recipes.

Baked Chicken Nuggets

Reviewed: Sep. 24, 2012
My kids and I loved these! The only changes we made were I used two eggs beaten to coat chicken instead of butter and I didn't have any thyme on hand. They were delicious!!

Drop Biscuits and Gravy

Reviewed: Jul. 13, 2012
I chose this recipe because my 10 year old son was wanting to make breakfast with little help, and I figured this would be easy as he wouldn't have to roll out biscuits etc. The gravy was fantastic! I would have preferred real buttermilk biscuits but I knew what to expect and they weren't bad.

Red Skinned Potato Salad

Reviewed: Jul. 13, 2012
I made this recipe for friends we had over for dinner. The husband said it was the best potato salad he had ever had.....and I agree, it was amazing! Only changes I made were I substituted half of the mayo for sour cream and used turkey bacon (just make sure you really crisp it up)

Awesome Slow Cooker Pot Roast

Reviewed: Apr. 20, 2004
This is a great, easy recipe but I did make some changes. I seared all sides of the roast before putting it in the crockpot and then added only 1 can of mushroom soup instead of two and substituted a can of beef broth instead of the water. Also I sauteed some onions in the juices left in the pan I seared the roast in and used it to make a gravy to add to the stockpot. This takes an extra 10 minutes but it is so worth it!
