High Altitude Meringue for Pie

My sister in CA sent me some lemons off the tree our Dad planted. They make the most fabulous lemon pie. But I never could manage meringue. I live in WY at 7200 ft. This recipe provided the crowning glory to a pie full of flavor and memories. The meringue was huge, fluffy, flavorful with no cracking or weeping. Thanks!

Lemon Meringue Pie III

I have never made an easier, more delicious lemon pie in all my baking years! I only had yolks left over from a white cake, so did not make the topping. But it was devine with whipped cream. This will be the only lemon pie recipe in my recipe box.

Focaccia Bread

I have been making this bread for 5 years now. What I now do is make it in the morning and let it rise all day in the fridge. Then I punch it down, make a pizza with 1/2 and let the other 1/2 rise in the fridge for bread with dinner the next night. This makes a great pizza dough and you don't have to add a lot of spice to your sauce cause its in the bread.

Banana Nut Bread I

This bread was made for Saturday morning and coffee. So good, we didn't even have to butter it. Recipe halves well, using 1/2 cup ea. brown & white sugar & 1 jumbo egg. Used pecans and butter. Bread was moist & flavor was intense. Thank you for this keeper!

Butternut Squash Soup

Just wonderful. I followed the advice of others...baked the squash. I used something other than butternut. I used 1/4 the cream cheese. I put everything in the blender except the broth. Let it chill over night, then thinned with the chicken broth as I reheated it for quests. They were scraping the pot for every last drop!

English Royalty Chocolate Chip Scones

To be fair, I only used the base recipe and a few hints from others. I used 8 tbsp butter, 2 oz o.j., 2 or 3 oz half and half, 1 tsp orange zest, 1/3 cup rehydrated dried cranberries & 1/4 cup chopped walnuts (I don't like chocolate & orange together). I sprinkled them lightly with sugar before baking. I don't know when I have had a better scone! Thank you for the inspiration!

Cream of Mushroom Soup I

Yum! Followed everyone's advice...pureed half the mushrooms, chunked the rest. Added garlic and sauteed in butter instread of broth. It is an ugly soup, but one I will make again and again.

Sweet Potato Rolls

This is a delicious bread. I made a loaf instead of rolls and it was huge. Will make rolls and a loaf next time. Thanks for the heads up about the flour. It took quite a bit more. Will make this again many times, I'm sure.

Portuguese Sweet Bread I

My sweetie loved this bread. I don't have a bread machine, so used my Kitchen Aid. Had to add more flour (I used regular unbleached) as dough was too sticky to work with. Well worth the effort and I agree with everyone that this is an excellent bread for french toast.

Buttermilk Honey Wheat Bread

This is a very nice bread! I read the reviews 1st and instead of adding flour, I reduced the buttermilk to 1 cup. Perfect!! Last time I made it I added 1/2 cup 7 grain cereal. Lovely.
