Easy OREO Truffles

Yummy and easy! I used 32 reduced fat Oreos ( I didn't have a whole package) and reduced fat cream cheese. Tasted great! Instead of topping coated truffles with remaining Oreo crumbs, I just put sprinkles on top. I also used vanilla and chocolate almond bark to coat the truffles. Use a fork to dip them and tap the fork on the side of the bowl once coated. It helps get any remaining chocolate off. Enjoy!

Black Bottom Cupcakes I

Amazingly delicious and incredibly moist! And honestly, not too bad for you! I follow the recipe except for one step: I don't add the chocolate chips directly to the cream cheese mixture. I wait until the cupcakes are ready to go into the oven and then drop a few chocolate chips on top of the cream cheese. Everyone loves them!!!

Baked Flan

This recipe is so easy and insanely delicious! My husband is Cuban and told me I could sell this in a Cuban restaurant! I've made it twice, and this time I decided to make a lighter version (I used 1 cup cream and 1 cup half & half, and replaced the cup of whole milk with skim). It turned out just as good as the full fat version...you can't tell the difference!!! I baked it for exactly 50 minutes, and even though it was still quite "jiggly" in the middle I turned the oven off. I let it sit in the oven with the door cracked open for 30 minutes. After the 30 minutes, I took it out of the water bath, put it on a plate, and placed it in the fridge for 4 hours...it was cooked perfectly!

Double Tomato Bruschetta

Soooo yummy!!! I let the mixture sit for a few hours and it was delicious! To keep the bread from become soggy, I used a slotted spoon to divide the bruschetta. I topped it with fresh mozzarella and it melted beautifully! All 30 slices were gone withing minutes!

Hot Artichoke and Spinach Dip II

Easy and Excellent!! I increased the mayo and cheeses to 1/3 cup and the dip was even creamier!!! People were literally eating it by the spoon!

Pumpkin Apple Streusel Muffins

AWESOME!!! I used the whole can (15 oz) of pumpkin and put the batter in 2 loaf pans. Baked them at 350 for just under an hour. Moist, scrumptious, and easy to make!!! You have got to try this!

Amish White Bread

Freaking AMAZING!!! I let my Kitchenaid mixer do all the work. I let the yeast activate in the bowl, then put the paddle attachment on and mixed in the rest of the ingredients (I used all 6 cups of flour). Once incorporated, I switched to the dough hook and let it work the dough until it formed a ball. It was so easy! I brushed the tops of the loaves with buttermilk and they came out golden brown and beautiful! My loaves baked 3 minutes shy of the total 30 minutes.
