Carrot Cake
Wonderful carrot cake recipe! It's very moist and has a perfect balance of flavor. I did change a few things because of reviews though. I had originally planned on cutting down the oil to 1/2 a cup but forgot to. Then because of another review I added about 1/2 a cup of pineapple juice from the crushed pineapple and to balance the dry and wet ingredients i added a 1/2 cup of flour and a pinch of baking soda and salt and well as a dash of cinnamon to keep the the flavor. I also added about a 1/2 cup more carrot and a sprinkle more of coconut. The cake turned out delicious. TIP: halve the amount of confectioners sugar in the cream cheese frosting and it will do wonders! I also never added the butter by mistake but it didn't really affect anything. XD hope this helps!

Coconut Cream Pie VI
This pie was a HUGE hit! My family loved it so much, my mother told me to make one for our next holiday. it was very smooth and creamy. My sister an I had a bit of difficulty with the consistency at first (which was most likely because of the quality of the cornstarch)but after my mother went and bought a better cornstarch it looked much better. To make it look more like a cream pie I had limited options so i drowned it in canned whipped cream at the last minute. :) which made it that much tastier.

Mom's Pie Crust
Awesome!!!!!! Finally a pie crust without shortening!!! Man do I HATE shortening! In my opinion it ruins EVERYTHING!!! NO EXCEPTIONS!!! Since I used this recipe for apple, pumpkin and pecan pie I decided to make some variations. 1) for apple pie add 1/2 tsp. vanilla extract and 1 tsp. of cinnamon. 2) for pumpkin pie do the same as the apple pie and then add 1 tsp. of pumpkin pie spice. 3) for pecan pie crust add the same as the apple pie but also add 1/4 cup of finely chopped pecans in the crust.
