Slow Cooked Venison

Reviewed: Mar. 2, 2013
Tasty! There was no bad, strong odor in my opinion. My man was so impressed being that I am a beginner AND have never cooked venison. BUT DO leave it in the slow cooker long enough so it gets nice and tender. 4 1/2 hrs on low was not long enough for mine... had to throw it back in for a while longer. Served it on top of some couscous and it was wonderful.

Banana Peanut Butter Bread

Reviewed: Nov. 25, 2012
I cooked 'em as muffins as reviewer AMY suggested and they came out perfect in 35 mins. I do consider what reviewers suggest and boy did AMY (TY Amy) steer me in the right direction!!!! Here are her suggestions so you don't have to look for her review:3 large over-ripe bananas, increase peanut butter to 3/4 cup, bring flour down to 1 3/4 cups, add 2 teaspoons of vanilla and 2 Tablespoons of brown sugar to the white sugar (still keeping white sugar amount the same), also add 1/2 cup unsweetened applesauce to the butter mixture (without taking down the amount of butter). I only had regular applesauce it worked just fine.

Lemony Quinoa

Reviewed: Nov. 24, 2012
I followed recipe exactly (OH except that I used chicken broth instead of water) and I love lemon but this was too lemony for me. I like the suggestion of maybe sautéing the onion first as well and I suppose cutting back on the lemon. The pine nuts were a great addition. Would consider using recipe again but we a few tweaks.

Mimi's Eggplant Casserole

Reviewed: Oct. 1, 2012
Eating it as I review! After reading some reviews I too tweaked recipe. I halved the ingredients except for the eggplant and the seasoning. I added mushrooms used parmesan and bread crumbs only bc that's what I had. All worked very well. I bit running but not too bad at all! Thanks Mimi!

Made as is - I agree with other reviewers in that it was missing "something". For me, that something was salt.

Not Spicy, a bit bland, but has alot of potential. It was still enjoyable but add more spices to flavor it up!

I loved it! Followed to a T... the only thing was that it was a bit salty so will not add salt the next time around. My man's eyes bugged out in delight with the first bite; he was hooked!!!!

Pineapple Chicken

Reviewed: Jul. 22, 2012
Excellent! I didn't have onion soup mix so I used what I had miso soup mix and it work very well. I used reviewers suggestions and added T soy sauce and T of brown sugar. I also add a T of four to my chicken and stir fried it with Seasame oil with garlic and onion for about 5 mins (its just my preference -I like browning my "meats"). The poured the liquid (I used the juice from the pineapple which was about 1/2 C -that was enough because I use 3 skinless boneless thighs (again just a preference; i prefer dark meat) and simmer for 20 mins. Came out perfect!

Asian Lime and Cilantro Sauce For Salmon

Definately double the ingredients! The taste of the sauce alone is great! BUT even though I left the salmon marinating for a couple of hours; the flavor was only apparent on top of the salmon :(

Delicious and EASY to make (I used fresh spinach which did make it a bit difficult to roll into a ball but no biggie).
