Roasted Yam and Kale Salad

So delicious. I love yams and I love kale- but together they were fantastic, especially with that "bite" from the red wine vinegar. I added some turmeric for good measure. I served this as a side dish but I will make again as a main for lunch as it is so satisfying. Thank you Matt D.!

Coconut Curry Chili

Very interesting. While I was preparing it I thought "weird", but this turns out to be a satisfying and tasty meal. I subsistuted sweet chili sauce for the chutney since I didn't have any, and instead of the beans I added chopped onion and sweet potato. A bit of turmeric went in too. It was a tad sweet for my taste so I added some hot sauce to balance the flavours. Served over brown rice and garnished with chopped cilantro and avocado slices. Thanks usmcwifey.

Oktoberfest Chicken and Red Cabbage

I love this recipe for it's simplicity. It's so easy to throw together (in one pot no less) and my guests enjoyed it with their beer. I threw in some caraway seeds to go with the German theme. Thanks Herbanspoons

Fiery Fish Tacos with Crunchy Corn Salsa

I had some jicama I wasn't sure what to do with and came across this recipe. I only made the salsa which turned out nicely- fresh and healthy. Using fresh corn makes all the difference. I had leftover grilled Seabass (fantastic recipe on this site, try it) I used for the tacos. Very light and delicious. I am not a huge fan of jicama but in this recipe it's not at all offensive! I will make the salsa again as a salad.

Simple Turkey Chili

Very good. I had to cook it for a lot longer than recommended to bring it to a thicker consistency so keep that in mind if you like your chili thick and less soup like. Everyone enjoyed this on chili dogs.

Grilled Sea Bass

This was great. Five stars. I purchased a beautiful piece of wild chilean sea bass and was glad to find this easy recipe. The only substitutions i made were cilantro for parsley and lime zest for the lemon pepper. I would serve this to guests.

Chlodnik - Cold Polish Beet Soup

Wow- such beautiful color. This was great for the 100 degree days we've been having. Perfect summer food although it may be a bit "challenging" for pickier palates. The fresh lemon juice is very important. Try serving it in a martini glass- so pretty. Other chlodnik recipes include chopped radishes as well. I really enjoyed this, thanks BJoslin!

Bean and Kale Ragu

I was satisfied with this recipe. A vegetable bouillion "cube" was added for flavor as well as some leftover pork chop, chopped. I used baby kale so it needed less cooking time. The results were tasty over quinoa. Thanks Stefanie.

Garlic Chicken Fragrant Rice On a Budget

I love the the idea of making a whole meal in the rice cooker. Now that I know it's possible, I will be experimenting more with it. Frozen peas and chopped cilantro were added before serving to lend color and extra flavor.

Sun-Dried Tomato Pesto

Hmm. I subsistuted with something called "semi oven dried tomatoes" that were packed in oil but otherwise I followed the recipe as written. The result tasted pretty good but had an unfortunate color. Pale brownish tinge. I will toss it with pasta or use as a spread for hamburgers. Next time I will try a different recipe.

Apricot Lentil Soup

This was just ok, I've made much more satisfying lentils before. This could have been because I used fresh apricots ( almost a cup). I also added cayenne powder, turmeric and a bit of curry powder all of which lent the soup a spiced flavor, but overall this just didn't wow me. I will have to try it with dried apricots next time.

Terrific Turkey Chili

Five stars. This is some healthy and satisfying chili. I made it to put on chili dogs. Killer! I highly recommend using the taco seasoning mix recipe from this site- tasty and preservative free.

Grilled Chuck Steak

Lovely marinade for a second rate cut of meat. I hadn't prepared chuck steak before and most likely won't be handling it again any time soon. This recipe however, is great... May try it on a flank steak next time.
