Crust for Veggie Pot Pie

I am shocked at how easy this recipe is and how amazing the resulting crust taste. I used whole wheat pastry flour and coconut oil in place of the white flour and shortening. I also let the dough rest a while in the fridge. I used half of the dough to top a veggie pot pie and the other half to top a peach pie. It was so easy to roll out and handle! Great recipe. Definitly a keeper!

Gazpacho II

Love this soup. I have mad it multiple times and have gotten creative and no longer measure the ingredients. I use V8 instead of tomato juice and sometimes use red onion instead of white. It even tastes great using roasted red peppers instead of pimento.

Muesli

This is my first experience with muesli and I am thrilled with the outcome of this recipe. Much more tasty than oatmeal and full of fiber and protein for starting the day. This will be a staple of our pantry from now on.

Black Bean Hummus

This stuff is amazing! We fight over it. Even my 7yo can't get enough. We substituted chick peas to make original hummus but the black beans are the best.

Amy's Garlic Egg Chicken

Suprisingly underwhelmed with this recipe. Chicken was not juicy. I marinated for 8 hours and cooked it on a rack in the oven to lower the fat. I guess you cannot lower the fat/calories without compromising the taste. That is a shame since the nutritional info on this dish is shocking! It took twice as long to cook as the recommended time and I even flattened out the chicken before hand. Will not be making again.
