Baked Delicata Squash with Lime Butter

Love the way the lime really brings out the flavor of the squash. This is an easy and unique dish that I make all the time!

Tuscan Cream Cheese Spread

Really good and easy to make. My version was a little runny (I soaked the tomatoes too long and didn't let them drain enough b/f adding) but still wonderful. Everyone is right about it being even better the second day.

Chipotle Chicken

I followed the recommendations of others and cut the chipotle quantity in half (which kept the sauce spicy but manageable). I also substituted 8 oz of corn and 1/4 of diced red pepper for the spinach. The end result tasted great. I will likely make this again.

Chicken and Lentils

Really liked this! I DID include the tomato sauce (unlike many others) and think it helped add a kick to it. I also added cumin to part of the batch and it was tasty either way. Only real alteration I might suggest is to use skinless, boneless chicken breast. It cuts @ 75 calories per serving from an already healthy, low fat meal and the taste was still good. Will make again! Thanks

Mediterranean Breakfast Quinoa

I LOVE salty things & was intrigued by salt/milk mixture. Unfortunately, it was too salty as written. Would suggest 1/2 amount of salt. Also a little bland, so I would add more honey or sugar next time. Perfect winter food b/c it was surprisingly filling! Couldn't eat more than 1 cup's worth and was full 'til 2pm.

Easy to make and nice over noodles or rice. I agree with some other reviewers that the taste is a little bland. I added a chopped onion and a little red chili pepper to enhance the flavor. Might make again.

Ham and Split Pea Soup Recipe - A Great Soup

Really easy recipe and a great way to use leftovers from the holidays (only needed to buy the split peas). It isn't anything super unique -- but it is a recipe that worked well just as written. I'd make it again.

Spicy Red Snapper

Baked Halibut Steaks

Very easy and tasty recipe! I didn't have halibut but used it for tilapia and it worked out well. It was a great single course meal. I prepared the fish with chili flakes and lemon juice and this added nicely to the flavors. Will make this again!
