Mama's Asian Chicken and Rice

LOVE this recipe. I make it regularly and usually double sauce. I prefer chicken thighs to breasts. Tonight I accidentally left out all the spices(!) and it was still great.

Quick Zesty Green Beans

Really enjoyed this recipe! We most often steam or boil our green beans, so it was nice to try something different. We really liked the sweet and savory flavors. We only made slight changes - half butter/half EVOO, and a cajun spice blend - and it turned out great. We will make these again and again.

Ground Beef Stroganoff

I made this exactly as written, except I left out the mushrooms and I added salt and pepper. I mixed the sauce right into the cooked noodles and told my kids it was homemade hamburger helper. They gobbled it up! Next time I will add more sour cream, as the creaminess was gone after mixing with the noodles.

Easy Kielbasa Skillet Dinner

As written this recipe was a bit bland. As it cooked, I added some chicken broth and a variety of seasonings. It's a great starting point though, and was a great way to use a lot of the fresh vegetables from my garden.

Sarah's Rice Pilaf

I love this recipe. It is so simple and tasty. I make it a couple of times a month. I do add some salt with the broth, but other than that, I follow the recipe exactly. I also will adjust the servings to six and it still turns out perfectly.

Jimmy Dean Hearty Sausage Mini Quiches

I used the hash browns, which made these more like mini breakfast bakes than quiches. But they were still super easy to make and fun for my guests. I love how adaptable the recipe is, and that it is gluten-free. I chose to grease my muffin tin rather than use muffin cups - probably not the best decision, as it was very difficult to scrub out the baked-on egg. These stored in the refrigerator well, so I was able to make them in advance and reheat quickly the morning I needed them. I will definitely make these again.
