Beefaroni

My kiddos loved it. It took about 15mins to throw together, and they snarfed it up! Served with some salad and fruit to balance it out, it was great. Totally a kid meal, and pretty good for the adults (but a little on the bland side for my tastes).

Boilermaker Tailgate Chili

BEST chili I've ever made! This recipe is great; lots of meaty flavors and great spices. Also, being a Boilermaker myself, I am partial. Kids don't love it too hot, so I take it easy on the pepper and hot sauce, but we add it to taste when we serve it. Great game day chili. Also, we don't do pork, but its great even without it.

Chicken Pot Pie IX

Very tasty. My family loved it. I did double the sauce and used a Pillsburry double crust. The only issue I had is that it came out too salty. Next time I will double the sauce still, but not the salt.

Cuban Ropa Vieja

WOW... this was EXCELLENT and so easy! I followed recipe, but added extra garlic and capers, and served with squeeze of lemon, over rice and side of black beans. Talk about DELICIOUS!

Ummm, pretty good but didn't love 'em. I skipped the cheese and added avocado. It tasted like it needed a little extra kick, maybe some more salt&garlic? I'll try them again, or maybe just stick to the steak with a side of tostones.

Grandma Ople's Apple Pie

WWWOOOOWWWW! This was the EASIEST and most DELICIOUS recipe I have ever tried. You can't really get it wrong, and its sooooo tasty. I followed the recipe to the T, and it turned out great. My hubby was so impressed, especially since I can't even get a box-cake right! Next time I'll use a pinch of cinnamon (because my husband likes it) but other than that... perfection!

Delicious Ham and Potato Soup

Yummy and comforting! Made a HUGE pot (increased to 12 servings) for my hungry boys/husband. They ate it up! (and had some for lunch the next day too!) I had no celery, so omitted that and replaced with carrot. We don't eat pork, so I used turkey ham instead, and turned out great! Will certainly make this again. Serve with a little sour cream and shredded cheddar for extra fun! (and calories ;-) )
