Chewy Chocolate Chip Oatmeal Cookies

Chocolate Mint Candies Cookies

These are easily one of my favorite cookies. They have been specially requested by my boyfriend different times. I tried making them with no-name mint candies and found they didn't melt properly as the chocolate layer was too thick (had to put them in the oven for a minute to melt it). I find After Eights work best.

Carrot Cake III

I chose this carrot cake recipe because it was the only one whose ingredients I had in my kitchen at the time (I didn't have all of the spices called for in others). It was my first time making carrot cake. I followed the recipe exactly and it turned out excellent! Will definitely make again! First time making cream cheese icing and wasn't sure I was doing it right at the beginning, but after a few minutes it came together really well.

Linguine with Clam Sauce

This recipes takes little time to make and is tasty. I used fresh, bottled clams and include the clam juice. It keeps well the next day.

Baked Scalloped Potatoes

Turned out great! I used 1 cup of 2% milk and 1/4 cup of evaporated milk. The only thing I changed was the baking time; it took about 1.5 - 1.75 hrs in the oven. Then, I let them cool for about 15 mins before serving so they weren't too runny. Will definitely make these again!

Blueberry Crumb Bars

I made a few changes to these. I added a layer of flax seeds, added 3/4 cup of oatmeal to the crumble mix, and only added about 1/4 cup of sugar to the blueberry mixture. They turned out delicious!

Old-Fashioned Fudge

Great fudge! I only had 2 unsweetened chocolate squares, so I used cocoa powder to make up for it. The flavor is rich and it is nice and soft, without being to sticky or rock hard. I used a whisk to blend the chocolate into the liquid, as brown flakes from the chocolate squares wouldn't dissolve on their own. I kept it in the fridge after it cooled down and it's still moist 2 days later.

Wild Rice Harvest Casserole

Yummy, hearty meal. I made it in an 8x8 pan and cut the recipe in half for 2 people. Still had leftovers for 1 the next day. I added crumbled crackers to the top for a bit of extra crunch and broiled it for 1 min at the end. It takes a while to bake, but is pretty low-maintenance. Smelled wonderful throughout the house!

Sara's Pumpkin Pie

Used this recipe to make my first pumpkin pie. It needed 10-15 mins extra oven time. The taste is spot-on. Turned out perfect with the extra oven time. Will make again.

Slow Cooker Beef Stew IV

I normally find stews bland, but this recipe has a lot of flavor. I've made it a few times now. Takes a bit of work at the beginning, but it can be left alone all day. It makes a nice smell throughout the house.
