No Bake Cookies V

I did as someone else suggested and added the oatmeal (3 1/2 cups rather than just 3) before the peanut butter, although I'm not sure it made that much difference as it all pretty much stayed the same temperature throughout both additions. I do have to note, though, that before scooping out the cookies onto the wax paper, make sure you have pans or towels underneath. Otherwise you get lovely grease stains on the cardboard sewing board you're using for wrapping gifts... I'm just glad it wasn't on my table.

Cranberry Apple Bread

I made this on Thanksgiving morning and brought it over to my mother's house since she enjoys the breakfast bread from Publix. She absolutely loves it. She has requested for me to bring it every time I come over now. After hearing a few people's problems with liquid, I let the apples and sugar sit for an hour to bring out the juices. After that, I continued the recipe as directed, with the exception of chopping up the cranberries in a food processor. It was moist and delicious. I actually had to bake the loaf for an extra amount of time because the dough was so wet. Love the recipe!

Homesteader Cornbread

I was surprised at how bland this was, what with all the raving reviews. I have never made corn bread before, but I took the advice of reviewers and switched the amounts of the cornmeal and flour and let the cornmeal and milk (I used almond milk, but that shouldn't make a bit of difference, and I used it to substitute milk all the time) soak for 10 minutes rather than 5. I wonder if honey instead of sugar and butter instead of oil would have improved the taste. Disappointed.

Slow Cooker Chicken Taco Soup

Love this recipe! I was a little wary of the beer, but it added a lovely aroma and taste. I used Sam Adams Light to try to cut back on the calories a bit and because we're watching our sodium intake, I added frozen instead of canned corn, used no-salt-added tomato sauce and diced tomatoes (plain, I added a separate can of green chilis instead), and used previously cooked dried beans in favor of canned. The only downside is that after the first night, most of the liquid was gone (and my attempts to make more resulted in sub-par leftovers). Next time, I'm going to double the liquid. I like my soup to be soupy, not chili/stew-like.

Inger's Spaghetti Sauce

Best spaghetti sauce we've ever eaten! We even use it for our pizza sauce. I make it in the crock pot - just throw everything in, set it on high for 4 hours, and done! Because my husband and I are on a low-sodium diet, we use no-sodium chicken bouillon granules and no salt added tomato paste. It cuts the sodium content down significantly without cutting out the flavor. I usually remove 2/3 of it for freezing, then add a pound of cooked ground chicken to the remainder in the crock pot and let it sit on warm for 30 minutes, so the chicken can absorb the flavor of the sauce. 5 stars! :)

Cranberry Orange Cookies

I gave this 4 stars because they cookies turned out very cakey. Not at all cookie-like. The only thing I changed in the recipe was to change the temperature (down to 350F, as someone had recommended) and added some almonds. I think the problem might be in the amount of cranberries. "2 cups chopped cranberries" is 2 cups cranberries after they have been chopped, but "2 cups cranberries, chopped" is a very different amount. I wonder if the recipe is calling for the latter but is written incorrectly. As for taste, I have to disagree with the "too sweet" claims. I tried the cookies without the glaze, and (especially with the cake-like texture), it tasted just like cranberry orange bread. Too tart for a cookie. The glaze (when added in moderation, such as the picture above, not slathered all over it like a sugar cookie) adds just the right amount of sweet to make it a cookie. Just wish the texture was better. I will definitely make these again, although I will try to tweak it next time. These cookies are much easier to make than the cranberry orange pinwheels we usually make every Christmas.
