Blueberry Scones

My entire family loved these. 3 generations - my mother, husband and young adult daughter. I used frozen blueberries (we had frozen after picking from a farm a week ago) and a mixture of all purpose and whole wheat flours. Cut butter into small chunks before cutting into flour. Also, mixed wet into dry ingredients all at once, but did not stir more than necessary to get the dry ingredients wet. Will likely make them again.

Whole Wheat Oatmeal Bread

My Mom and I absolutely loved this bread. I followed the recipe, using the whole wheat rapid rise setting on my bread machine. It was perfect, and I'm about to make another loaf.

Sauteed Scallops

This was my first time cooking scallops and I absolutely loved them. I did sprinkle the scallops with a little seasoning salt. Served over angel hair pasta. Truly delicious! This is a keeper.

Oatmeal Pancakes

These were really good. My husband and I truly enjoyed them. I did not have all purpose flour, so I substituted bread flour. I used nonfat buttermilk and increased the sugar to 1 1/2 tsp. The more I ate them, the better they tasted. They were very hearty and yummy. I tried plain and with molasses and brown sugar syrup. I ate the majority without any syrup, but the brown sugar syrup was very nice with these pancakes.

Key Lime Pie I

I just made this last night with fresh key limes and fresh lemons. I thought it was really good. Haven't shared it with anyone yet. I thought it was a little sweet. I used reduced fat condensed milk. I may try next time with all key limes. I used a prepared graham cracker crust and refrigerated overnight. I'll definitely make again.
