French Onion Soup V
Super soup! I use Gruyère cheese instead and whole wheat bread slices instead of a baguette. Otherwise, I follow this recipe as given, and it's my new favorite onion soup.

Catherine's Spicy Chicken Soup
Like many other reviewers, I use a little less chicken, fewer tomatoes, brown rice (not instant), low-fat sour cream and a can each of kidney & black beans. This is an amazing recipe. I think you can modify just about any way you like and it will still be wonderful. Bravo, Catherine, and thank you!!

Baked Salmon Fillets Dijon
Best salmon recipe I've ever tried. I use honey Dijon--it's delicious. First time I made this dish, didn't have any breadcrumbs so made my own with some stale whole wheat bread, then tossed the crumbs in a baggie with a little Italian seasoning. Wonderful! The next time, I bought some bread crumbs but I prefer the homemade ones. Like other reviewers, I used less butter--just dotted some low-fat margarine on top instead of drizzling melted butter on. This is an absolutely SUPERB recipe and I thank the original contributor!
