Avocado Green Goddess Dressing

I LOVE creamy, savory dressings but they are loaded with fat and salt. I took the advise of reviewer Sabra Bartlett and subbed all that mayo with Greek yogurt and non-fat sour cream. I also used anchovy paste (so happy to have used the rest of what I had!) in place of the anchovy fillets. I then thinned it a bit with white wine vinegar. YUMMO!! Absolutely delicious. Zero guilt and nothing to repent for at the gym tomorrow! Thanks so much for a much better dressing than the dreaded vinegrette.

Chef John's Beans and Greens

Chef John I've enjoyed playing with this recipe! This time, I rendered nitrate free bacon. After removing the bacon from the pan, I removed the fatty parts and chopped the lean pieces to add later. I sauteed 1 yellow onion, 1 tsp curry powder and the garlic in the fat. Once the onions were caramelized, I added Trader Joe's low sodium vegetable stock, seasonings and liquid smoke. After reducing per your recipe, I added the beans, a can of Glory seasoned collard greens I had on hand and some leftover (cooked) turkey meatballs. The chopped bacon went into the pot in the final few minutes. Yum! Talk about amazing flavor and pretty healthy to boot.

Kiki's Mexican Chicken Salad

I was attracted to this salad because it is chock full of power veggies! The high calories and sodium are the only reason I gave it 3 stars. I tweaked the base recipe a little to reduce the fat and salt. I used Hellman's canola mayo instead of regular mayo and low fat sour cream. I also only used 1 avocado - it was plenty for our tastes. Instead of high sodium taco seasoning, I combined 1 full tsp of cumin, 1 full tsp black pepper, 1/4 tsp cayenne, 1/4 tsp chili powder, 1/4 tsp onion powder, 1/4 tsp smoked paprika & 1/8 tsp ground mustard. Omitted the hot pepper sauce entirely. The spices added enough kick. Super yummy & perfect over salad greens!! I will be making this all summer long! Thanks, Kiki!

Chicken Tortilla Soup I

Awesome recipe! Delicious and healthy too. I'm watching my weight so I poached the chicken. Before poaching, I seasoned the chicken with a packet of Sazon Cilantro and Tomato seasoning. I added one chopped chipotle pepper and 2 tbsp of chipotle liquid to the poaching liquid. Omitted the oregano and used 1 heaping tsp of chili powder mixed with another packet of Sazon Cilantro and Tomato seasoning. Followed the remainder of the recipe as written, but used Kraft's 2% shredded Mexican cheese blend. Yummo!!

Stuffed Peppers with Turkey and Vegetables

So very good! Nice way to use up all the bell peppers and other veggies before they went to waste. The only things I did differently was adding one spicy turkey sausage removed from its casing. I needed to use that up too and using an Adobo Salad & Vegetable seasoning packet. Will definitely make again and again.

Trini Style Chicken

Dee-licious! Like another reader said, I was worried about caramelized sugar, but wow did it so much depth to the flavor. I removed the chicken when half done and sauteed chopped white onion in the pan juices per another reader's suggestion. When the onion was soft, I deglazed with chicken broth, added more Sazon and spices. Added the chicken back in. When the sauce reduced, I coated the chicken pieces and added the bok choy. Served it all on a bed of rice. So tasty and so easy. Thanks for my new chicken and rice dish!

Mom's Best Ribs

Now that I know where I went wrong before I tried this again and with stellar results. I only used 1/3 cup of low sodium soy sauce. I had no parsley nor cilantro so I used herbs de provence. Fantastic! Everyone kept picking at it all night and packed it a la pulled pork sandwiches for lunch today. This was a great recipe. Just needed a little tweak to suit our tastes. Thanks!

Mom's Stovetop Pork Ribs

I thought this was an okay recipe - maybe because I actually like salty food. If you don't, then I suggest that you cut down on the amount of soy sauce you use. I used La Choy lite soy sauce and still it was a bit too salty - even for my tastes. My ribs did come out very tender, but they did not have enough flavor for me to try this again.

My Favorite Soup

I made a few low-fat changes to this recipe and they worked well. I substituted the cream cheese with fat-free neufchatel and in lieu of cream of potato soup I used fat free cream of mushroom. I took the suggestion of adding a variety of seafood. Easy, guilt-free and delicious. Doesn't get much better than that!

Apple, Cranberry, and Pear Crisp

I used Gala apples and substituted the cranberries for dried figs. I took the advise of others and added some spice to the topping. I thought the fruit was a little dry. Next time I think I'll slightly cook the fruit mixture in a little water before baking. All in all it was an easy dessert. Much more enjoyable served warm over with ice cream.

Chili Vegetarian Style

Best Carrot Cake Ever

This truly is the best carrot cake recipe I've found so far. I mince the raisins for a more even texture. Since I'm always asked to make this during the holidays I've decided to make carrot cake loaves as gifts!

Mushroom Chicken Piccata

It was good. Took cues from other reviewers; pounded the chicken thin and doubled the sauce. I also added Mrs. Dash Table Blend seasoning to both the flour and egg mixtures for more flavor. The only other thing I would change was the cornstarch thickening. Next time I'll just use the flour used for dredging. I served the extra gravy over garlic smashed potatoes & a side of sauteed green beans. Turned out fine.

Lamb Chops in Duck Sauce

I really enjoyed this recipe. It was so easy to make and I had everything on hand. The chops came out so tender and the flavor was well-liked by the whole family. I could hardly get two words out of anyone at dinner. I think I'll try this on ribs next time. Way to go Khadija. Thanks!

Anaheim Fish Tacos

Two thumbs waay up! This was absolutely delicious, not to mention and very quick & easy to make. Like some others, I substituted the halibut for another firm fish - scrod. I didn't have any Anaheim chilis so I used the poblano chilis I had on hand. We prefer flour tortillas so I used that but after the first taco, we ended up eating the remainder of the mixture over rice to make full use all of that yummy broth. Thanks so much for this guiltless pleasure! I'll make this one over and over again.

Black-Eyed Pea Chowder

I really enjoyed this one. To make it lower in fat, I used cubed smoked turkey instead of the bacon; as such I used chicken broth in lieu of the beef consomme. I'm not especially fond of tomatoes so I left them out, yet it still came out yummy. I served it with rice - not a drop was left over. I'll definitely make this again.
