Chef John's Beans and Greens
Chef John I've enjoyed playing with this recipe! This time, I rendered nitrate free bacon. After removing the bacon from the pan, I removed the fatty parts and chopped the lean pieces to add later. I sauteed 1 yellow onion, 1 tsp curry powder and the garlic in the fat. Once the onions were caramelized, I added Trader Joe's low sodium vegetable stock, seasonings and liquid smoke. After reducing per your recipe, I added the beans, a can of Glory seasoned collard greens I had on hand and some leftover (cooked) turkey meatballs. The chopped bacon went into the pot in the final few minutes. Yum! Talk about amazing flavor and pretty healthy to boot.

Kiki's Mexican Chicken Salad
I was attracted to this salad because it is chock full of power veggies! The high calories and sodium are the only reason I gave it 3 stars. I tweaked the base recipe a little to reduce the fat and salt. I used Hellman's canola mayo instead of regular mayo and low fat sour cream. I also only used 1 avocado - it was plenty for our tastes. Instead of high sodium taco seasoning, I combined 1 full tsp of cumin, 1 full tsp black pepper, 1/4 tsp cayenne, 1/4 tsp chili powder, 1/4 tsp onion powder, 1/4 tsp smoked paprika & 1/8 tsp ground mustard. Omitted the hot pepper sauce entirely. The spices added enough kick. Super yummy & perfect over salad greens!! I will be making this all summer long! Thanks, Kiki!

Chicken Tortilla Soup I
Awesome recipe! Delicious and healthy too. I'm watching my weight so I poached the chicken. Before poaching, I seasoned the chicken with a packet of Sazon Cilantro and Tomato seasoning. I added one chopped chipotle pepper and 2 tbsp of chipotle liquid to the poaching liquid. Omitted the oregano and used 1 heaping tsp of chili powder mixed with another packet of Sazon Cilantro and Tomato seasoning. Followed the remainder of the recipe as written, but used Kraft's 2% shredded Mexican cheese blend. Yummo!!
