Beet, Orange and Apple Salad

My guests raved about this salad. The beets turned the apples the most amazing bright fuchia color. I served it over a bright green lettuce instead of the beet greens for a prettier color combo (and ate the beet greens later). It takes a while to prepare, what with cooking and cooling the beets and cutting everything up, but the final result is delicious and really lights up your dining table.

Grandma's Corn Pudding

Easy to prepare and delicious. Definitely comfort food. I replaced ALL the eggs with egg substitute and the taste didn't suffer. I also tossed in some frozen corn to stretch it a bit when I found another guest was coming to dinner. But the basic recipe served the table of 8 with seconds.

Italian Peas

Loved this recipe. So simple. I have an old Italian cookbook and their recipe calls for a little grated parmessan on top, which is more fattening, but tastes great. I, too, cooked my frozen peas first then added them to the sauted onion and garlic.

Perfect Summer Fruit Salad

I deleted the brown sugar and vanilla and added a heaping teaspoon of honey to the liquid instead. Tasted it several times along the way to see if it was sweet enough, and decided to use two packets of Splenda instead. It feeds at least 10 people and everyone liked it.
