Mozzarella Chicken

I have made this recipe for years and I have never made the sauce or put any liquid in it, just cooked it as is and it's a staple in our house, one of our faves! Gave it 4 stars only because I don't cook it exactly according to the recipe.

Mexican Tinga

I gave this 5 stars because I made as directed and my hubby and i thought it was delicious. It's like Mexican BBQ sauce or something, sweet, smoky and spicey. Warning though!!! It's crazy hot! I had to mix sour cream in it along with putting some on top! It was honestly a little to hot for me but I gave it 5 stars because the flavor was delicious and the hotness factor is personal preference. I will DEFINTELY make it again, but not for the kids!! :-)

Salsa Chicken Rice Casserole

OMG! This was great, but my hubby and I both felt like something was missing. Sometime after supper my hubby said "It tastes like the filling in a Taco Bell burrito!" So the next day we got tortillas for the leftover casserole and some taco sauce and oh my goodness! This stuff is heaven as a burrito filling!!

Banana Crumb Muffins

So good! My kids and hubby ate them up! The ingredients are basic and most bakers and cooks will have them on hand at all times! They mix up fast and cook in 20 min. The topping is crunchy and buttery and the muffin is moist and banana-tastic! What's not to love about these muffins?!

Slow Cooker Chicken and Dumplings

So easy and so awesome! But don't use flaky biscuits, they don't turn out well at all! Be sure to get the home style or buttermilk, those always work and this recipe is delicious! But remember, NO flaky biscuits!!

Tuscan Soup

Roasted Chickpeas

Awesome!!!!!!I soaked dried chickpeas in the fridge overnight, then boiled/simmered them for like almost an hour. I let them cool then cooked them on 400 (per other reveiwers suggestions)for over an our. They took FOREVER to finish cooking! Once they cooled though, they turned crunchy and VOILA, I had an amazing snack! My 4 year old and 2 year even loved them!! I used olive oil, sea salt, garlic salt, onion powder and a smidge of cayenne! My hubby and I are snaking on them right now!

Greek Chicken Pasta

Really good. My hubby liked! Mine got dry pretty quickly so serve immediately! It's not so much a sauce over the pasta but more like the pasta is coated in the flavor, which was super delish. The lemon juice gave it the kick it needed to make the flavor pop, definitely don't leave that out!!

Chicken Tortilla Soup V

DEEE-licious! I have 6 people in my house so I had to double the recipe. It was spicy and soooo good. We used pepper jack instead of the Monterrey jack because we wanted just a kick in the cheese. SO good! Perfect for a cold night!

Monkey Bread V

This recipe was really good. But it seemed like it lacked something, that little something to send it over the moon, which it ALMOST was. I think it was brown sugar. It could have used brown sugar to give it a more caramely flavor. It was really good though.

Fabulous French Loaves

So awesome! I've made these twice now! The first time i thought they had an oily taste, but my hubby didn't think so. The second time, I didn't taste it, so maybe it was just me! Anyway, really good bread. I personally think that french bread should have a crustier crust, but that's just my preference. Overall, it's most definitely worth making. I'm about to go make it for the 3rd time!

One Bowl Chocolate Cake III

I gave this recipe 4 stars only because it stuck to my pan so bad we just frosted it in the 2 round pans and ate it out of the pan. I also greased and floured the pans like I do every time I make a layer cake and I've never had a cake stick so bad, homemade or boxed. Taste wise, it was really good!The texture was great! It was really pretty too. Too bad it stuck so horribly =(

Whole Wheat Ginger Snaps

These were great! I like chewy cookies and these fit the bill. My hubby and two littles ones loved them too! They are very spicy and delicious. Be sure to let them cool completely before storing them as they have a tendency to stick together if too warm.

Easy Red Beans and Rice

I followed the recipe exactly and although it was good and my hubby and I ate it, it wasn't the best. We will eat the leftovers for lunch tomorrow because we don't waste food, but it was just ok. There wasn't really any sauce for the bean, sausage and onion pepper mixture, it was just kind of sitting on top of the rice with a little tomato juice in the bottom of the bowl. I'm from the south and this isn't what red beans and rice is supposed to taste like. I've never made red beans and rice so I've ben looking for a good recipe. I've been cooking for over 10 years and I follow recipes all the time with fantastic results and so I really don't think it was something I did. If you want a vegetable/sausage/bean over rice meal, then this fits the bill. But if you want real red beans and rice, look somewhere else.

Rich and Creamy Roasted Eggplant Soup

My husband and I wanted to try something different and healthy so this sounded great! WRONG! It was bland and smelled awful! Do not try this unless you're used to eating tasteless bowls of goo!
