Beans and Greens

Very good! I added a can of diced tomatoes and 1c. diced onion, and substituted a quart of tomato juice for half the broth. Very good, very filling, and it freezes well too!

Vegan Chunky Chili

I tweaked this recipe a bit to suit my taste (and time constraints), and it's awesome! I used a can of chili beans instead of soaking all those dry beans, left out the green beans, didn't bother to cook the tomatoes down, browned the tofu up a bit first, and only added water as needed as it cooked, which made it the perfect consistency.

Sausage Meatball Sub

Excellent! I prepared this a little differently than the recipe stated. I cooked the meatballs in the sauce for 45 minutes, which made the sauce nice and thick and the meatballs had great flavor. Topped with my favorite sub toppings, these were awesome!

Heart Chop Suey

The heart came out really chewy, maybe if I had simmered it for another hour. The wortchestershire sauce is also a must, the sauce is kinda bland without it.

Fiesta Dressing

Black Pepper Beef and Cabbage Stir Fry

I doubled the hamburger and cabbage, used one green pepper and one onion, doubled the soy sauce and used the same amount of hoison sauce since I had it on hand and they say the secret to great Chinese is lots of sauce. Very yummy! Would even be great without the meat for a nice vegetarian meal.

Breakfast Enchiladas

Great idea, and very easy to change to suit other tastes or what you have on hand. I used sausage instead of ham (had it on hand), scrambled 9 eggs and threw them into the mix, used red enchilada sauce (again, on hand), and they rocked! Next time I will go shopping and make it as stated. Love this recipe for it's versatility.

Crab and Shrimp Delight

Very good. I took the advice of other reviewers and left off the onions, and added Old Bay, garlic, and pepper. I used thin spaghetti instead of angel hair, increased the milk to 2c., and it came out great, the pasta cooked completely.

Sadie's Longboy Cheeseburgers

The filling was good, but the bread crust got so crisp it was nearly impossible to bite through. If I make this again, I will take another reviewer's tip and brown the meat first and bake only for a short time.

Breakfast Casserole II

This was great. The tater tots were a nice change from hashbrowns, and the mushroom soup gave it great flavor. I added the mushrooms along with some onion and green pepper to the sausage while it cooked, and added salt and pepper too. Thanks for the great recipe!

Cottage Cheese Potatoes

Very tasty! I loved the consistancy. It was a little runny right out of the oven, but set up nicely as it cooled down. Did add salt, pepper, parsley, and garlic to give it a little flavor since I couldn't find chive-flavored cottage cheese. I think next time I will add more cheddar too, just to make it cheesier.

Guacamole

Yum! I've never made guacamole since my fiance doesn't like it, but we're having quesadillas tomorrow night and I wanted some to go with mine. Made this up tonight so the flavors could meld and couldn't resist a sample. This stuff is great!!!

Tuna Tofu Salad

Kinda bland, I ate it as a topper for a spinach salad, and it needed a lot of ff Italian to give it some zip. Maybe more salt or some garlic powder or sweet pickle relish would have helped. It was ok, but nothing I'll be rushing to make again.

Chili Chicken Stew

This was very good, very flavorful. I boiled a whole chicken to make my own broth and get the meat I needed; didn't have any green pepper on hand so substituted a few cloves of garlic; used two cans of cream of chicken soup per other reviewers recommendations; and for veggies used broccoli/cauliflower/carrot mix. Loved it, thanks for the great recipe!

Weekend Brunch Casserole

I really thought I would like this recipe more. Per other reviewers suggestions, I added onions, green peppers, and mushrooms, and used 6 eggs and a little more milk. I thought the crescent roll crust sounded wonderful, but it just didn't do anything for me. It was ok, but I won't make again.

Country Breakfast Casserole

Yum! This is so good! I added salt and pepper to the eggs, and used 8 eggs since I was making it in a 9X13, but everything else I did as directed. The top of the bread gets nice and toasted and the gravy mix gives it a wonderful flavor. A keeper!

Southern Macaroni and Cheese

This was ok. Since I like cottage cheese more than cheddar, I made the recipe as stated. I guess I was expecting something a little creamier, this was very solid when it was done. If I ever make again, I might leave out the eggs and bake just enough to heat it through.

Local Kine Wontons

This filling was awesome, but I liked it better before it was fried up in the wonton skins. I wasn't ready for the "crunch" the water chestnuts added, if I make this again, I'll probably leave those out and just add more crab. Also, the prep time must not include folding all those wontons, it took me nearly 2 hours from start to finish.

Italian Meatball Sandwich Casserole

I used almost the same ingredients in this recipe, just prepared them a little differently. I simmered the meatballs in the spaghetti sauce (sans water) for 45 minutes, till they were done and the sauce was very thick. I used hoagie buns instead of bread to make individual sandwiches. The cream cheese spread was awesome, gave it great flavor!
