Awesome Broccoli-Cheese Casserole

This was great!! I switched a few things around after reading the other reviews and it came out way better than I had expected, ALL my kids ate it which is great as there is usually one who won't eat at EVERY meal. I used 2 bunches fresh broccoli and 1 head of fresh cauliflower which I boiled for a little bit first. 1/2 cup each of mayo and sour cream. No egg as I have an egg allergy and no topping although I may try that next time. I only used a little pepper and salt to season and didn't measure any cheese, just grated it and mixed it in. I'll definitely be making this again - so quick and easy to prepare !!

Granny's Sweet Potato Bread

OK so I made this but made muffins rather than a loaf. I made a few changes, I only used 1 cup of white sugar (we don't like things too sweet in our house)and it was plenty sweet enough but think I'll use half a cup of white and half a cup of brown sugar next time. I also didn't add any pecans or make the topping. I reduced the cooking time slightly, the muffins took about 20 mins at 375. I made 24 muffins but they were pretty small so next time I think I'll probably do 16 - 18 larger muffins. Everyone in my family loved them (especially the kids - even the picky one). I only gave it 4 stars as I found cooking the potato a little time consuming - I will peel and boil next time as this only takes about 20mins as opposed to 1 hour in the oven and then having to wait for it to cool enough to peel. I WILL be making this again. My kids loved this!!!!

Slow Cooker Oatmeal

Ok so i read all the reviews before making this and really wasn't actually convinced it would turn out ok but hubby was away and the kids wanted oatmeal!! Wow it was fabulous!!! super super easy and turned out great, i made a few adjustments as recommended and cooked it in a large (ish) slow cooker that was at least 2/3's full. I used 1 cup or old fashioned oats 2 cups water 2 cups milk (2%) 2 tbsp butter 1 tbsp cinnammon I sprayed with butter first, popped everything into the slow cooker and left overnight, I cooked on low for 4 1/2 hrs and then my cooker automatically switched to warm until we got up the mext morning. I gave it a quick stir and added 2 tbsp of sugar and 1 more cup of oats, mixed it all up and the kids loved it! I had no problems with anything sticking to the sides or bottom :) I will definately be making this again, i think i'll either reduce the liquids a little or add more oats at the start to get the perfect consistancy (but adding an extra cup of oats in the morning was really no problem).
