My name is Erika and I have enjoyed baking for several years now. I love to bake whenever I feel the need to. I have made quite a broad range of desserts of the past years. To this day baking helps me to relax and enjoy my life. I am all about pleasing the taste testers of my baking. If I do not approve a recipe, I simply delete it from my selection. Simply put, I LOVE TO BAKE!
My favorite things to cook
My favorite things to bake are: Several types of cookies including; chocolate chip, oatmeal raisin, coconut, snicker doodles, etc. I also like to bake cheesecakes (especially turtle and peanut butter brownie bottom). I enjoy making different kinds of brownies, fudge, toffee bars, rum balls, and cake (I recently made a red velvet cake for the first time from scratch and it came out excellent). I also like to bake different kinds of breads, my favorite being chocolate chip pumpkin bread.
My favorite family cooking traditions
My family has many cooking traditions. Cooking wise we make tamales every year before thanksgiving. On Thanksgiving and Christmas day I am responsible for making all of the desserts. I make rum balls around Christmas time in memory of my Grandma Shirley who passed away in 2009, she was a great baker.
My cooking triumphs
Most of my desserts I have made have been delicious. But there have been a few that I did not approve of (keep in mind others liked them, they just did not live up to my expectations).
My cooking tragedies
The one thing I have cooked that I did not like was spaghetti squash. It had a terrible texture, was to juicy, and was overall not very tasty. My dad who loves just about everything he eats didn't even like it. I will never make spaghetti squash again.
