Mom's Chocolate Chip Cookies

These cookies came out way too soft. I like cookies with a crunch. Next time, I might use less egg and flatten out the cookie dough before baking. Actually, if the pudding is there, then you don't even need the egg. There was a slight baking soda taste to the cookie.

Chocolate Cupcakes

I followed this recipe exactly (except for the baking time) to make both mini and regular sized cupcakes. They came out very well! They were not moist, but not dry either. I did cover them after baking to reduce moisture loss, though. The flavor wasn't anything special or exciting, but was adequate. This is a good, simple chocolate cake recipe.

Lemony Sweet Potato Pie

This was delicious! I used yams. I steamed the yams first until cooked, and waited for them to cool down. Then I just mashed and blended it together. I did not sieve the yams, so the pie came out fibery, but it was still very good. I did not add any water, especially since my yams were steam-cooked. I also added a lot less sugar (1/2 of what the recipe called for), because the yams were already so sweet. And I added a lot more lemon extract (2.5 times more than the recipe) to bring out the lemony taste . It was delicious! Everyone complimented on the vibrant orange-red color (because of the yams). I bought the crust, which was the worst part of the pie. Next time, I will leave the crust out and just bake the filling in little tart pans.

Easy Pancakes

I thought it was a bit strange when the recipe called for 2 tablespoons of baking powder. But nonetheless, I'm new to cooking, and I like the follow the recipe exactly. The pancakes came out extremely fluffy, but I believe that it tasted like baking powder. And it took a while to cook, because it just kept rising as it was heated. I would cut down on the baking powder and the salt in the future.
