Mushroom and Swiss Chicken

I let this marinate overnight and basted it with the juices while cooking and after I added the cheese. Yum!!!!

Very good soup. Giving it a 4 star because you do have to add more spices then calling for to give it flavor. But after that my family loved it!

Mom's Pumpkin Pie

Turned out very well. First time I made a pie without using the good old canned stuff. My mom said it was the best part of the Thanksgiving dinner! I did as others suggested and strained the pruee over night, added more spice then the recipe called for, and baked it longer at a lower temp.

Chicken Enchiladas II

My family loved this! I doubled everything, maybe even more so with the sour cream, cheese and chicken. I cooked the chicken up in olive oil with salt, pepper, cumin, garlic power and lime juice (as another advised) to give it more flavor. Also I used 12 of the smaller tortillas instead of the bigger ones. Will be making this many times in the future.

Pork Roast with Thyme

What is wrong with me? Everyone seemed to love this recipe. All I can say is our house smelled like vinegar the whole time it was cooking. When it was done (and three hours is way too long) I had to scramble to find a way to make the gravey something my family would eat. And even though I marinated with the sauce through out the cooking process the roast was no more tender then normal. Sorry Joe, I wanted to love it. Maybe it's just me.

Barbequed Pork Ribs

Very good ribs. I added some honey to sweeten the sauce a little. Brown sugar would work good too. My husband commented on how good they were without having to be asked. That is a good sign!

Baked Pork Chops I

Just made this tonight. Very easy to make and the whole family loved it! The meat was so tender. I did use chicken broth instead of wine, but I'm sure it would taste good either way. The sauce tasted great over rice, might even try it over some mash potatoes next time.

Burrito Pie

Easy to make and very, very good. Leftovers reheat nicely the next day too. Rather than Burrito Pie I call this Mexican Lasagna.
