Spinach Alfredo Sauce (Better than Olive Garden®)

Very easy to make. I halved the recipe, used fresh spinach and added a bit of red pepper flakes. It was also a little thin for my taste so I added a little corn starch mixed with water and it ended up a great consistency. Didn't need to add any salt.

Keema Aloo (Ground Beef and Potatoes)

Easy dish that came out pretty good. I halved the recipe but kept the same amount of spices and it still could have used a bit more. All in all tasty! Looking forward to leftovers tomorrow.

Egyptian Lentil Soup

Looking for something easy to make. This was delicious though I had to make a couple of changes. Only had green lentils (so the finished meal looks a bit like baby poop but, like I said, it's delicious!), ran out of cumin so could only put about 1 teaspoon in but I added some curry powder and it actually works. I'll be sure to get some more cumin though and make it again.

Butterscotch Oatmeal

Was looking for a way to spruce up plain oatmeal and this hit the spot. I used 1/4 cup brown sugar as some suggested but with my sweet tooth I could have taken it a little sweeter. Added sliced almonds, cinnamon, and diced apples for some crunch. Has a great flavor and a wonderful gooey thick texture. It'll probably be my go-to oatmeal recipe!

Cindy's Jambalaya

Delicious delicious and very easy to make. A few changes out of curiosity and what I had handy: 1) added chicken 2) added half a can of cream of shrimp soup (from another version of this recipe. Only reason I did that was because I didn't know such a thing existed and I had to try it), 3) added a jalapeño pepper, 4) used up some chicken/mango sausage I had left over instead of smoked and 5) used brown rice. I will definitely make this again and try adding some other goodies! Thanks for a great one!

Sweet Potato and Black Bean Chili

Great googly moogly this is delicious! The only changes I made were done so because I didn't have something on hand. I used a yellow bell pepper and 1 can black beans plus 1 can chickpeas. The rest was all the same. I was thinking about forgoing the "special" spices (chipotle and ancho) but boy am I glad I didn't! Wonderful smoky flavor they added. I don't even like cilantro much but it adds something in the end. And it wasn't too spicy for me at all. If anything next time I'll add another jalapeño.

Indian Eggplant - Bhurtha

This was quite good! I never broiled an eggplant before; it was very easy and turned out a great texture. Though next time I might use 2 eggplants or a larger one since I thought there could be more. The only modifications I made had to deal with quantities. Doubled all the spices and the ginger and garlic for my own taste. Ixnayed the cilantro since I don't like it. But all the flavors are there to begin with. Will make this one again.

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

Love this one. Only a few modifications based on what I had: added some spinach with the kale, used horseradish mustard, and cooked quinoa in chicken broth. Have enough for lunch tomorrow, too. Great!

Vegetarian Kale Soup

This was delicious! I used what I had on hand - red & yukon gold potatoes, chicken bouillon, some minced jalapeño for a little kick, a can of chickpeas, and some fresh spinach in addition to kale. The spices were perfect; I didn't even need to add salt or pepper. Seems like this recipe would be wonderful on its own but it's also easy to customize based on taste and what you've got in stock. Will definitely make again!

Avocado Egg Salad

This was delicious! Made some changes just based on what I had on hand. No mayo but it held together without it. Used Dijon mustard, dill pickles, and added some crushed red pepper as well as celery for a little texture. Served it in a pita. Will definitely make this again!

Shirred Eggs

These are the things I had on hand to cook with: half and half, green onions, asiago cheese. Those were the only changes I made except the cooking time. After 12 minutes the whites were still raw so I upped the temp a bit and cooked another 10 minutes. That cooked the yolks almost completely though and I'm a runny fan. That being said the flavor is fantastic. Next time I'll adjust the cooking time some more and hopefully can find the right balance. Such a great alternative egg recipe!

Mmm-Mmm Better Brownies

Great brownie consistency: chewy but not too dense. I do agree that they weren't quite sweet enough for my taste but that can be tweaked. I wish I had seen the butter in lieu of oil suggestions beforehand. Perhaps that would have made them richer which could compensate for the lack of sweetness. Next time! All in all pretty good recipe!

Quinoa and Black Beans

Great recipe! I used chicken broth since I had it on hand, fresh cooked black beans, fresh corn cut from the cob, and added some zucchini and jalapeños. I would add some more spice next time but the cumin adds a good flavor. Tasted great with plenty of leftovers for tomorrow.

Soy Sauce Chicken

I used boneless chicken thighs, added a bit of cayenne for some spice. Quick and easy and delicious. Got a good ginger taste from it. Served with steamed broccoli and brown rice.

Indian Fish Curry

This was delicious. Bought a nice cod fillet and used honey dijon and chicken broth instead of vegetable broth as I had those on hand. Baked it for ~35 minutes. The smell was amazing! It was quite spicy for me but not too much. Maybe I'll cut back a little on the cayenne next time. It did get a little watery but I used canned diced tomatoes so maybe try for fresh. Served it over white rice with a few pieces of naan (maybe a little redundant!). I'll be making this again!

Best Chocolate Chip Cookies

Best cookie I've made! Took another reviewer's advice and added some cream of tartar. Nixed the walnuts (allergies). I also made them slightly larger so baked them longer ~15 minutes. Came out crunchy on the outside but chewy inside - my favorite kind. This'll be my go-to choco chip cookie recipe. Many thanks!
