Garlic Salmon
This recipe rocks! The Salmon is moist and flavorful. You touch it and it just melt! Adding more Thyme gives it more kick and taking out the garlic. Arrange the lemons on top nice and pretty and then add some asparagus for extra goodness!

Quick Edamame Salad
This has become a house favorite! We add extra soybeans for more crunch! Watch out on the oil or it feels like you are constantly wearing lip gloss. I added more herbs then recommended for more POP. This recipe makes A LOT of food. I used a very large bowl and it was just enough room. I would make this again and have passed this recipe on to friends. :)

Vegan Black Bean Soup
I really enjoyed this soup! I also find that adding brown or white rice gives it a heavier feel and more substance. The sodium is REALLY high on this however because of all the canned veggies. You can find cans at local markets that are organic and have little to no sodium which make this recipe all the better. I also added a little more vegetable broth for more a "soupier" consistency. Be sure you use a big pot because this makes a lot! We've been eating it almost a week now between 4 of us! :)
