Chicken Florentine Casserole
This dish is phenomenal! Big hit at my dinner party. I ended up doubling the recipe. Instead of canned spinach I used frozen. Also - I only sprinkled enough mozzarella cheese on the top to cover my casserole dish and didn't need as much as it called for. After cooking the chicken I sliced mine into large pieces which made it easier to dish out for a group.
