Asian Beef with Snow Peas

Awesome! I don't do vegetables and if stir fried the way recommended, the snow peas come out with perfect snap. I stir fried some yellow and red peppers in sesame oil for 30 seconds and added after the snow peas for extra color and flavor. Added a little bit of ginger and garlic after adding snow peas to stir fry. Served with a szechuan mango and chili dipping sauce over white rice.....AWESOME!

Deb's General Tso's Chicken

AWESOME! Made the sauce only to compliment some leftover sesame chicken from the night before. Added some hoisin and garlic sauce with a hint of cornstarch to thicken. Dropped the leftover sesame chicken (previously deep fried) in the sauce, stir fried.....made a lovely glaze. Served with fried rice...AWESOME!

Popeye Fried Chicken

Been doing this for years....dont compare it to Popeye's...simply call it "spicy cornflake chicken". I trick it out by adding bread crumbs to flour and the crushed cornflakes. For added spice, I add cayenne, ground white pepper and smoked paprika to the flour/cornflake mix. Oh yea!

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

I give four stars with an asterisks. I dont know how people could cook meat in the oven with straight salt and pepper....bland bluh. I did however, go salt and pepper and cook rib eye on the grill. I topped steak after one flip with a light layer of grey poupon and the bleu cheese crust. AWESOME. I do have to note the cut I tried in the oven was a club tenderloin...a poor mans filet if you will. Nonetheless, it was not good at all...go figure

Poached Salmon with Hollandaise Sauce

My wife liked the fish but LOVED the hollandaise sauce. Prepared and served as written (not a big fish eater, so there was no taste testing), she found the salmon a bit under-seasoned. The hollandaise sauce made the fish better. I will poach salmon again but with use vegetable stock (used chicken previously with water), a little bit more salt, a hint of onion powder, and will use a lemon and cracked peppercorn. Poaching with straight water is stewing and water being a solvent, removes flavor.

Best Ever Meatloaf with Brown Gravy

I used the recipe as a base as I have never liked meatloaf but I tricked it out. I cooked a can of mixed veggies in olive oil, teased with basil, oregano and garlic. While vegetables were firm, I bored a hole in the top of the raw meatloaf, layered it lightly with seasoned breadcrumbs, sifted a tablespoon of rosemary, spooned in veggies, then topped with beef, sealed off perfectly, sprinkled the top with a little bit more rosemary. Every 20 minutes, basted lightly with gravy. When 20 minutes were left on ticker, put remaining veggies in pan. When 5 min left, removed veggies and all drippings, place in remaining gravy in pot, heated and added cornstarch and splash of red cooking wine. A few more things done that made this a winner, but this recipe is a good springboard to perfection

Blackened Prime Rib

I follow the instruction to a tee but added two tsp of garlic salt.....not impressed. Spent $30 bucks on two nice size prime rib....tasted ok, but wont use this recipe again

Tropical Grilled Chicken Breast

I did not care for this recipe. Using both orange and lemon juice is a no go in my book, but I tried it anyway. Followed recipe to the letter.
