Easy Chicken Pasta Alfredo

Reviewed: Mar. 1, 2015
I know, do not make changes. But, I used rotisserie chicken that I had and subbed in skim milk thickened with flour to reduce the calories. Also used minced garlic when sautéing the mushrooms. This was great. Will make this again. Good for lunch the next day. Yum.

Neat Sloppy Joes

Reviewed: Feb. 12, 2015
Ok, my family likes green pepper so I added that. Used tomato sauce instead of catsup and added few drops of hot sauce. Was told by family that this is now the new sloppy joe recipe. Get rid of the others.

Baked Pork Chops I

Reviewed: Feb. 9, 2015
I am in the process on this recipe. Need twice as much egg mixture and bread crumbs. Very time consuming to get together. When browning take your time, will burn quickly. Will finish update when chops are done. Ok, so I have not decided if the effort. Was worth it but the chops were very tasty. Family really liked them. Change rating to 4 stars.

Delicious. Added some hamburger for my guys. Did not use this as fat burning but as a really good soup.

This was super easy and delicious. The only change was I used boneless thighs, doubled the egg mixture, and the butter mixture.

This was just a little tart. But still very good. Made just as written. Will make this again. No one complained. Maybe add some ice cream next time.

Asparagus, Chicken, and Pecan Pasta

Reviewed: Apr. 22, 2014
I am already looking forward to making this again. I did marinate the chicken before grilling. Just use your favorite flavor. Did add a small amount of red pepper flakes. Thought 16ozs of pasta was too much. Need to cut back on that. Otherwise, this was fantastic.

Oven Fried Chicken III

Reviewed: Apr. 12, 2014
I made a few changes simply because these are the items I had. Used reduced fat mayo and fat free sour cream as my base. For the chicken, I had boneless, skinless thighs. This turned out perfect. Not greasy or oily.

Asparagus Parmesan

This is a great side dish. I added onion and garlic and sautéed until tender before adding the asparagus. This is now my go to recipe when I have asparagus. You must try this.

Baked Teriyaki Chicken

Reviewed: Feb. 3, 2014
I really like salt and this was very close to being too much for me. Use either low sodium soy or do not add additional salt. I will make again but will use less salt.

Mexican Potato Nachos

Made this Super Bowl Sunday. Really good. We had it as a meal. I did cut my potatoes rather thin. Almost chip thinness. Put parchment paper on pan and they cooked up perfect.

Slow Cooker Pot Roast

Reviewed: Jan. 26, 2014
Super good and super easy. I cooked this in the oven on 300 for 4 1/2 hours. Covered roasting pan. Added about a cup more water. Be sure and put the carrots in. They were excellent. Served over mashed potatoes. I did not salt the meat as the packets of seasoning have plenty of salt but did use the pepper. I will be making this again very soon.

Szechwan Shrimp

Reviewed: Jan. 16, 2014
I doubled the amount of shrimp so I made 4 times the amount of sauce per other reviews. I used just over 1/4 teaspoon of red pepper for the entire amount of sauce. Thank goodness because that was just the right amount of hot and my son loves spicy. Unfortunately, my husband was not a fan of this recipe. So, start with a little pepper and add to your taste. It does not take much for this recipe.

Southern Baked Yellow Squash

Good but needs additional flavor and not so much butter. Think ritz crackers would be better than bread crumbs. I will be experimenting with this.
