Oven Fried Chicken III

I made a few changes simply because these are the items I had. Used reduced fat mayo and fat free sour cream as my base. For the chicken, I had boneless, skinless thighs. This turned out perfect. Not greasy or oily.

Asparagus Parmesan

This is a great side dish. I added onion and garlic and sautéed until tender before adding the asparagus. This is now my go to recipe when I have asparagus. You must try this.

Baked Teriyaki Chicken

I really like salt and this was very close to being too much for me. Use either low sodium soy or do not add additional salt. I will make again but will use less salt.

Mexican Potato Nachos

Made this Super Bowl Sunday. Really good. We had it as a meal. I did cut my potatoes rather thin. Almost chip thinness. Put parchment paper on pan and they cooked up perfect.

Slow Cooker Pot Roast

Super good and super easy. I cooked this in the oven on 300 for 4 1/2 hours. Covered roasting pan. Added about a cup more water. Be sure and put the carrots in. They were excellent. Served over mashed potatoes. I did not salt the meat as the packets of seasoning have plenty of salt but did use the pepper. I will be making this again very soon.

Szechwan Shrimp

I doubled the amount of shrimp so I made 4 times the amount of sauce per other reviews. I used just over 1/4 teaspoon of red pepper for the entire amount of sauce. Thank goodness because that was just the right amount of hot and my son loves spicy. Unfortunately, my husband was not a fan of this recipe. So, start with a little pepper and add to your taste. It does not take much for this recipe.

Southern Baked Yellow Squash

Good but needs additional flavor and not so much butter. Think ritz crackers would be better than bread crumbs. I will be experimenting with this.

Mama's Italian Wedding Soup

I would rate this 5 stars but I cooked my meatballs before putting them in the broth. Baked them for 15 minutes at 350 degrees. Was not willing to take a chance on the grease or the color. Added some onion to broth as well. This was very good. I will make this again.

Classic Rice Pilaf

This rice is very good and easy. Instead of mixing the broth and the rice together in the baking dish I heated the broth in a separate pan and once it boiled poured it in the sauce pan with the rice. I then poured all into the baking dish. Baked exactly as written. Perfect.

Mouth-Watering Stuffed Mushrooms

These are good but a little too spicy for my liking. I would cut back on the cayenne pepper if I make these again. Also, I think the consistency was not what I had in mind. I was looking for something with more crunch I guess. The cream cheese, of course, makes it very soft.

Baked Haddock

Used Italian bread crumbs for this and added some garlic powder and parsley. This is what I had at the time. Followed the timing exactly. Best fish I have ever fixed. Family raved about it.

Slow Cooker Salisbury Steak

I did what you should not do on a recipe....modify before you try as is. But it turned out great. Used golden mushroom soup instead of chicken. Put hidden valley ranch dressing mix in meat instead of onion soup and put half a packet of onion soup in with golden mushroom soup. Excellent.
