The Best Unbaked Cherry Cheesecake Ever

Reviewed: Jan. 19, 2011
For years, I have been making something very similar. I use a regular baked pie shell and only 1/2 C powdered sugar. I got the recipe from a friend's family recipe collection. It makes a refreshing dessert in the summertime plus it's my husband's birthday dessert.

Oven Roasted Red Potatoes and Asparagus

Reviewed: Nov. 17, 2011
OMG .... this is delicious. Be sure to add the asparagus at the end so it doesn't overcook. I cut mine in 4ths. Upon cooling (waiting for my husband to end his business call), I drizzled some Balsamic Vinegar on top. (This advanced the rating to a 15. Tee Hee.) Next time I made add a little while cooking. Also, next time I will add some diced red onions. I will be making this soon. :)

Spicy Shrimp and Red Bean Soup

Reviewed: Nov. 17, 2011
Loved the thicker consistency. I used Old Bay and dried cilantro instead of the dill (not measuring either) and it was excellent.

Yummy ..... I used French Onion Sour Cream (store-bought .... not heavy on onion flavor or the brown color) and one thinly sliced green onion (for green color). Our guests, my husband and I LOVED it.

Creamy Spiced Coleslaw

Reviewed: Aug. 16, 2011
Very close to the coleslaw Mom made. She used raisins or Fruit Cocktail, I used Craisins. This is a tad spicier than hers which is a good thing. I, too, used less mayo and added some sour cream. Yum.

Lemony Chicken with Artichoke Hearts

Reviewed: Aug. 7, 2011
Totally GREAT. I cooked my chicken in the George Foreman, and made the sauce in the pan. I added mushrooms (should have added onion, darn!) and capers. I did not add the Bay Leaf. I mixed the pasta with the sauce and added lots of shredded Swiss Cheese. OHHHHHH, so gooooood. Thank you!!!!! I cannot wait to make this again.

Beef 'n' Eggplant Pie

Reviewed: May 14, 2011
Usually I make the recipe "as listed" the first time, but tweeked it to fill yellow bell peppers. I used a whole eggplant (with skins on) and doubled the tomato sauce. I love eggplant (especially with the skins on) and was hoping my husband would too. (He can go either way.) We loved the result. Thanks!!

Cheese Potato Puff

Reviewed: Apr. 4, 2011
Yummy. Please take one reviewer's comment and stir in the cheese vs. mixing in the cheese. The potatoes came out a tad dry, so I will add milk next time. I used garlic salt instead of regular salt. In addition to the cheese on top, I added bacon bits. Yummy ..... and "thank you".

Peanut Butter Vegetable Chicken Soup

Reviewed: Mar. 24, 2011
I would give this 10 stars if I could. Love, love, love it. I thickened it up a tad with cornstarch, as we prefer it that way. So many variations with so many vegetables. I used canned chicken, and it was excellent. Next time, I would use two cans! Thanks a million!!

Lemon Horseradish New Potatoes

Reviewed: Dec. 3, 2010
Loved this recipe. I added some chopped red onion, grated lemon rind, and extra horseradish. Although I am not really a fan of horseradish, it WORKS here, especially with the fresh lemon! To my serving, I added Walmart's Peach-Pineapple Chipotle Salsa. Totally yummy. Thanks!

Mexican Casserole

Reviewed: Nov. 4, 2010
I added chopped onions and chopped garlic to chicken saute. My dish was not dry at all .... wished the sauce was a bit thicker. I will use more salsa next time. I also used home-made taco seasoning mix. Leftovers could be used in a tortilla shell for a quick lunch.

Cinnamon-Raisin Granola

Reviewed: Jul. 1, 2010
What an inspiration!! I refuse to buy granola in the stores OR make mine own with many, many ingredients. I love plain yogurt, raisins, cereal and sliced bananas. I have even been known to use plain cereal (whatever) but it was lacking the next level ... major crunch and some sweetness. Today, I melted some honey into a frying pan, added my already mixed raisin bran type (CEREAL) and oat-type (CEREAL), then cooked and mixed well. I filled a cookiie sheet of this and baked in a 350 oven for 15 minutes, stirring every 5 minutes. Yummy Thank you so very much.
