Easy Slow Cooker Sweet and Sour Pork Chops

Nice flavor and very easy. I used more chopped onions, added fresh pressed garlic, added a "glob of peach preserves, substituted apple cider vinegar for the lemon, and added bell pepper chunks and sliced canned pineapple (both near the end). I thickened the sauce to use as gravy over rice. Next time I will cut the onions in big chunks and add red food coloring for a more traditional looking dish. I love the ease of using a crock pot. I will make this often. Thanks.

Lemony Chicken with Artichoke Hearts

Totally GREAT. I cooked my chicken in the George Foreman, and made the sauce in the pan. I added mushrooms (should have added onion, darn!) and capers. I did not add the Bay Leaf. I mixed the pasta with the sauce and added lots of shredded Swiss Cheese. OHHHHHH, so gooooood. Thank you!!!!! I cannot wait to make this again.

Slow Cooker Au Jus Pot Roast

I made this for company. I doubled the amount of coffee, a mistake, but was OK because we like lots of gravy. I thickened the sauce with cornstarch. I love Montreal Steak seasoning and it's a staple in my house. I will be making this many times over.

My Mom's Chicken Cacciatore

Totally yummy. I used Marsala Wine instead of Brandy (didn't have any) and bone-in thighs. Research on the Internet recommended the Marsala as a substitute. I have not made Chicken Cacciatore in YEARS but this recipe will change that. BTW, I mixed together the liquid ingredients the day before and stored in the refrigerator. They really bonded!! Thanks.

Ratatouille

Great ingredients ..... especially the sauted garlic and eggplant. Did that, as given but used much more garlic!! I made the following major change ... mixed the remaining ingredients (except for the tomatoes), LIGHTLY sauted them, layered then in thirds, about 1 cup each, adding tomatoes, cheese, white wine, and basil between layers. I used more cheese on top. I reduced the baking time to 30 minutes = perfect outcome. The vegetables were not overcooked. I RARELY alter the original recipe the first time but think the ingredients look better with a little more color from sauting. I will make this on a regular basis. Thank you for the healthy, meatless dish!!

Easiest BBQ Pork Chops

My husband and I are divided on the rating, thus a 3 star. I loved it. So flavorful, easy, etc. I added a can of drained corn WHICH IS MY HUSBAND'S FAVORITE VEGETABLE and he still rated it "barely a 1". He loves all of the ingredients but together, they do nothing for him. I am happy to have the leftovers!! Ha. Ha.

The Best Unbaked Cherry Cheesecake Ever

For years, I have been making something very similar. I use a regular baked pie shell and only 1/2 C powdered sugar. I got the recipe from a friend's family recipe collection. It makes a refreshing dessert in the summertime plus it's my husband's birthday dessert.

Breaded and Baked Zucchini

I loved the concept .... I made the recipe as given, using Greek Salad Dressing instead of Italian. It was really good but needs tweeting. The zucchini was cooked perfectly. I think I need more color of the bread crumbs when cooked. I loved the faint mustard taste. I had to use plain GF bread crumbs so next time I will add some cheese, basil, or oregano, etc. Just having something breaded that is so good when we are avoiding gluten is a BIG PLUS. Thank you.

Best Ever Shrimp Dip

I used 3/4 C. mayo, added about 1 tsp. lemon juice, and some dried chives. Honestly, it needed some color! Next time I will add Old Bay. Yum. Everyone loved it with crackers, sesame sticks and pretzels. Easy and great appetizer. Thank you a bunch :)

Beef 'n' Eggplant Pie

Usually I make the recipe "as listed" the first time, but tweeked it to fill yellow bell peppers. I used a whole eggplant (with skins on) and doubled the tomato sauce. I love eggplant (especially with the skins on) and was hoping my husband would too. (He can go either way.) We loved the result. Thanks!!

Ham Casserole

Wow, very nice! I substituted frozen peas and carrots for the bell pepper. I doubled the amount of potato and doubled the cheese sauce. So glad I did. It needed pepper. I loved the sauce and there was lots of it. Next time I would add more ham and peas/peas and carrots. Definitely comfort food.

Chicken Salad Balsamic

I loved it ..... added a few things ..... trail mix (raisins, cashews, peanuts) instead of walnuts, added some shredded cheese, and some red onion. Next time I would add some red seedless drapes. Totally yummy.

Eggplant Tomato Bake

Loved it .... after adding salt and pepper, pesto, and EVOO. Even though this added calories, it is still next-to-nothing calories. YUM. I think it's more like an appetizer. I left on the eggplant skin and baked at 400 degrees for 20 minutes was nice.

Chicken Biscuit Pie

OK, 5 stars after minor tweeking .... I added thyme, oregano, and grated fresh garlic. For the biscuit, I used Glutin Free Bisquick. Hubby and I are totally jazzed with eating a biscuit topped casserole since we are (trying to be) GF. This is comfort food!!! So easy. I will make this many times. ;)

Amy Rose's Roasted Cauliflower Soup

This recipes needs tweeting but has possibilities. I LOVED the cumin in this recipe. Perhaps my Magic Bullet pulverized the soup too much, but I would prefer it chunkier and thicker. I added some chopped red onions near the end of the cooking with the broth and added shredded cheddar cheese on top when serving. There will be a next time!!! I think I will thicken it with a slightly thickened white sauce. Yeah, I know, more calories, but we just like thicker soups.

Oven Roasted Red Potatoes and Asparagus

OMG .... this is delicious. Be sure to add the asparagus at the end so it doesn't overcook. I cut mine in 4ths. Upon cooling (waiting for my husband to end his business call), I drizzled some Balsamic Vinegar on top. (This advanced the rating to a 15. Tee Hee.) Next time I made add a little while cooking. Also, next time I will add some diced red onions. I will be making this soon. :)
