Big Ed's Cajun Shrimp Soup

We don't eat Cajun (spicey) but loved my toned-down version. I didn't have a bell pepper but can see where it would be good. I added two cans of clams. Yummy.

Slow Cooker Au Jus Pot Roast

I made this for company. I doubled the amount of coffee, a mistake, but was OK because we like lots of gravy. I thickened the sauce with cornstarch. I love Montreal Steak seasoning and it's a staple in my house. I will be making this many times over.

Sweet Potato Minestrone

Wow, what a soup and so simple!! OK, I used yams and added 1# of cooked ground turkey. It is totally colorful for Halloween and Fall. I especially love the five garlic cloves!! Thank you!!!

Chicken Salad Balsamic

I loved it ..... added a few things ..... trail mix (raisins, cashews, peanuts) instead of walnuts, added some shredded cheese, and some red onion. Next time I would add some red seedless drapes. Totally yummy.

Rosemary Turkey Meatloaf

Wow, I have a lot to say. First of all, I only used 1 T of fresh Rosemary for the meatloaf and 1/2 C of brown sugar in the topping to 2 # of ground turkey. (I also decreased the milk and balsamic vinegar by half). RESULTS: I thought the meatloaf was too "rosemary-ie" but loved the meatloaf topping. (And I love Rosemary!!!) Hubby thought meatloaf was not spicey enough and loved the topping. I am anxious to see what becomes of the leftovers!!! Who knows, I may change these reviews. To be continues!!! I hope I can be able to write another review. FYI, we love meatloaf!!!

Slow Cooker Coq Au Vin

Cooking time was way off. Next time I would bake it in the oven. Funny color with red wine + mushroom soup. (It became brown with a tad of Kitchen Bouquet.) I took one reviewer's suggestion and thickened the sauce "later". I served it over rice. Nice gravy. Oh yes, I added sliced fresh garlic, about 2 cloves. :)

Cucumber-Watermelon Salad

Better two days later. So little calories; such big taste. These are totally refreshing, too. I liked then a lot better than my husband, who has a few dislikes when it comes with food. It could be a girl thing such as for a bridal/baby shower. My watermelon created a lot of juice and I had cut back on the balsamic vinegar.

Veneto Chicken

I doubled the sauce and it made a lot. I "Magic-Bulleted" a can of dice tomatoes and used that as my base instead of the chopped tomatoes. Loved the tasted. Next time I would make it with bone-in chicken thighs. I didn't even pick out the sliced mushrooms (not my favorite). I will be making this a lot. Thank you.

Grilled Lemon Chicken

I added lemon zest, halved the Dijon mustard, added capers and baked in a 350 degree oven for 1/2 hour. Very moist results!!! :). I thickened the sauce in a saucepan with cornstarch and water. I thought it was a tad tart but hubby LOVED it. I loved the tender chicken. I served with mashed potatoes and cooked cabbage. :)))))

Breaded and Baked Zucchini

I loved the concept .... I made the recipe as given, using Greek Salad Dressing instead of Italian. It was really good but needs tweeting. The zucchini was cooked perfectly. I think I need more color of the bread crumbs when cooked. I loved the faint mustard taste. I had to use plain GF bread crumbs so next time I will add some cheese, basil, or oregano, etc. Just having something breaded that is so good when we are avoiding gluten is a BIG PLUS. Thank you.

Roquefort Pear Salad

What a refreshing and filling salad. I used red onion instead of green onion, added a sliced hard boil egg, and kept everything else the same. What a wonderful masterpiece. I will be making this again, very soon. Thank you.

Nothing special. I cut down on the sugar as recommended by other reviewers. It was still too sweet for me although the house smelled so wonderful. Easy prep, though. I will not be making this again.

Cheesy Zucchini Casserole I

Delicious. A tad over done veggies but still delicious to a person who hates mushy veggies. I changed things a little .... used GF bread crumbs (small amount as it was all I had), 3 C. zucchini, 2 eggs, 1/3 C. Cheddar cheese in mixture and 1 1/3 C. Cheddar cheese on top. I used a Pyrex dish 8" x 11" and baked it just under the required time. Next time I would add crushed or sliced garlic. What a wonderful find. Thank you.
