Pork Chops with Scalloped Potatoes

Reviewed: Jun. 3, 2014
Not good and not bad!! I read all of the reviews so I was prepared. My potatoes cooked (yeah) and my 1+ inch boneless pork chops cooked (yeah). It took 1 hour. I thickened the sauce with Kitchen Bouquet. Potatoes were very bland. I did not use all of the Thyme but I don't think using all of it would be the answer. The potatoes tasted like they were boiled. Ugh. I missed the crustiness of the milk and cheese. I won't be making this again, although my husband would disagree.

Strawberry Pie Filling

Reviewed: May 17, 2014
As written it was good enough to tweet. It was soupy and a tad too sweet. The second time I made it, I decreased the sugar to 1/2 C. For the 1 C, of strawberries, I used my Magic Bullet. No need to strain! I used 4 T, of cornstarch = gelled perfectly! It even sliced perfectly.

Roasted Red Pepper and Tomato Soup

Reviewed: Apr. 14, 2014
Good soup but labor intensive. I won't make this often but when I really want to cook, then I will make this. Next time I will roast the tomatoes to see if there is any difference. Maybe I will even consider the short cuts (canned items), just to compare.

Cheesy Amish Breakfast Casserole

Reviewed: Apr. 3, 2014
Wow! What a great recipe .... a definitely GO TO for a meal for Breakfast or a Lunch (for company) or Dinner for the home-folk!!! I followed the recipe pretty much to a tee ... cooked my bacon in the George Forman. Added a little half and half, used half Ricotta and half cottage cheese mixed with an electric mixer. Honestly, at first, I did not like the texture but soon realized it was less fat (by far) than using the same ingredients with canned condense soup. All I can san is "thank you".

I added more sauce and added some Annie Chun's Pad Thai Sauce. Loved it and will make again. So many possible variations.

Springtime Spaghetti

Reviewed: Mar. 22, 2014
Well, to put it bluntly, I could eat this often. I tweeked the recipe .... added 2 can of minced clams at the end, cooked my linguine in water + clam juice, steamed fresh asparagus but decided to add 3/4 of the pound to the finished project, served with lemon juice. I cannot wait to try it with shrimp or vegetarian, with any vegetable you have on hand. Love, love, love it! The best review I could give is: I would serve this in my restaurant, if I had one. Thank you!! Thank you!! I cannot wait to make this again, and again, and again!! Thank you!!!

Noodles Riviera

Reviewed: Mar. 15, 2014
Just OK but my husband loved it. I have been making a similar recipe, a stuffing in bell peppers for years. That one was easier as it had tomato soup. In this recipe, I used ground turkey, used cilantro in place of parsley, pepper cheese along with Parmesan, and added black pepper. Maybe next time I will mix everything together. I was worried the sauce was too thin but it wasn't. Lots of steps = lots of dishes.

Feta and Turkey Stuffed Green Peppers

Reviewed: Mar. 9, 2014
Did not add the fennel as we do not care for fennel. Stuffed bell peppers are a staple in our house but these did not work. I will eat the leftovers but hubby will not.

Pork Marsala

Reviewed: Mar. 2, 2014
Excellent and easy!!! Pork chops were very moist! I baked them in a 350 oven for 15 minutes. I omitted the mushrooms as I don't care for them.

Chicken, Spinach, and Potato Soup

Reviewed: Mar. 1, 2014
If I could, I would give it 10 stars!! I used cubed cooked chicken leg meat, lots of garlic, lots of onion and added grated white cheese on top. I added an individual portion of fresh spinach to each bowl, filled with soup and microwaved it for a couple of minutes. Yummm!!!

Eggplant, Zucchini and Sweet Red Pepper Stew

Reviewed: Feb. 15, 2014
I really wanted this to work since I loved every ingredient, especially eggplant. It just didn't blend together and there is nothing on earth to save it. So sad. The rice cooked beautifully, too. (I had my doubts.)

Apple, Cranberry, and Pear Crisp

Reviewed: Feb. 8, 2014
I usually read the reviews before I try a recipe but not this time. I knew it would be "right on" and it was!!! The first words out of my husband's mouth was "this is good enough to serve to company". I love the simplicity of it yet elegant enough for company. A big winner!!

Dar's Super Savory Sauerkraut Potato Bake

Reviewed: Feb. 5, 2014
Yum. Everything fit into a 7 x 11 pan and cooked it a tad longer. I put parsley on top, mainly for color. Next time, perhaps I will put bell pepper inside or something green .... the color is pale. I used red onions. I used 1 1/2 C. Sauerkraut and it could use more. Thank you for the recipe!!

Quick Chicken Marinade

Reviewed: Jan. 14, 2014
I would make it again but cut down on the oil. I used bone-in/skinless chicken thighs. Flavor was great, just too much unnecessary oil.

Eggplant Croquettes

Reviewed: Oct. 26, 2013
I loved it. Anyone who likes eggplant should enjoy this recipe. I used stuffing crumbs (not with water added) and grilled the croquettes in my George Foreman = less calories BY FAR. Nice in a great Stadium Bun with mayo, mustard, Swiss cheese and Bread 'n Butter pickles. I halved the recipe and it made three good-sized patties. Of course, my non-eating eggplant husband was disappointed but finished his burger.

Crispy Rosemary Chicken and Fries

Reviewed: Oct. 11, 2013
I was totally blindsided by this recipe ....... I make potatoes all the time this way (yummy) and thought, OK, what a nice addition of chicken thighs. Wrong. Grease, fat, hardly crispy, ETC., and I downward adjusted the amount of olive oil.

It was just OK. I made it since I had all of the ingredients on hand and wanted something sweet. It set nicely. There are just too many other desserts to try anew rather than repeating this one.

A Very Popular BBQ Sauce

Reviewed: Sep. 20, 2013
I think you should heat up the sauce. And I added fresh, chopped garlic ..... lots of it!!! (I am from California!) Mine is heating right now and I cannot keep from snitching it. I cannot wait to try it on pulled pork burritos for tomorrow's dinner The Sauce can only get BETTER!!
