German Leek and Potato Soup

Very good. Will make again. Didn't have a ham bone so I added some julienned lean ham, which added a nice flavor, towards the end of cooking before pureeing with an immersion blender. I liked the fact that the leeks didn't overpower.

Authentic Miso Soup

Meat-Lover's Slow Cooker Spaghetti Sauce

easy to put together and the finished product was delicious. I used what I had on hand: Italian sweet turkey sausage, threw in the remainder of a jar of pasta sauce to equal the amount of tomato products used in the recipe, then let it cook on low all day. The aroma alone was worth the effort. I took time to caramelize the onions with the teaspoon of sugar rather than adding it in at the end of the cooking time. If I'd had any meat bones left over I'd have thrown them in too. I thought it was interesting that the sauce was adequately seasoned considering you don't add any salt, it's all in the canned tomato products. This is going to be my staple homemade sauce.

Boston Brown Bread III

Made as described except couldn't find my loaf pan and used muffin tins instead and they came out like the best bran muffins I've ever had. Light, moist, just enough sweet and delicious warm out of the oven with butter or vegetable oil spread. Will make again. So easy and a great eat-on-the-run breakfast food.

Power Bars

My tweaking: didn't have corn syrup and really didn't want to use it anyway, so I substituted 1 cup of best quality honey, 1/2 cup of white sugar and 1/4 cup of sugar/splenda blend. Into the cereal mix I threw some milk chocolate morsels. Taste results: really, really sweet and I can taste the wildflower honey. Texture: they were sticky so I put them in the freezer to cut, but once frozen they didn't cut cleanly into bars but broke into pieces. Am wondering if my substitution of honey for corn syrup, and cutting back the white sugar by 1/4 cup, affected the texture.

Slow Cooker Risotto

Maybe there is something wrong with my slow cooker, but the rice was overdone while I was waiting for the garlic to soften up and mellow. The garlic was too sharp and assertive for me; if I were going to do this recipe again, I would use garlic powder or saute the garlic until it was softened. However, it smelled great and the rice got very creamy (I may have overcooked it). I'm not a risotto expert so I'll need to try making it the old school way on top of the stove. But this is so frickin' easy, I may never make rice on the stovetop again!

Baked Rice Pudding

Very simple to make. I upped the white sugar from 1/2 c. to 2/3 c. since I like my puddings sweeter, and it was not overly sweet. I also didn't bake it the full hour in my gas oven; I stirred it at 30 mins. into the cooking and it was getting ready to set, so I let it go another 10 minutes. I don't like dry rice pudding. I also substituted light cream for the milk and it was very smooth and had a great mouth-feel, but I would make it next time with whole milk to cut the calories.

Simple Spinach Lasagna

Substituted ricotta for cottage cheese and canned diced tomatoes for jarred spaghetti sauce, and it was still very tasty and my finicky teen liked it! Used the no boil lasagna noodles. Very easy recipe. Just make sure you put enough sauce on top layer of noodles so they don't dry out during baking.
