Coconut Oatmeal Cookies II

I've been baking these for 6-7 years now and get rave reviews. It's a great recipe if you're looking for something rich and tasty, but not chocolatey. I can't count how many times people have asked me for the recipe. They don't come out too pretty, but they taste fantastic. I always use real butter, ghirardelli white choc chips, and the sweetened coconuts flakes (Baker's brand). About some of the complaints I've read--if your cookies are coming out too flat and runny looking, it's because your butter melted too much (it's tempting to melt it in the microwave because there's so much). If you do let everything soften too much, cool the dough for a bit before baking. I use a cookie scoop or tablespoon to measure these out. Also, be generous with the space you give them on the sheet. They're...territorial. Juicy Roasted Chicken

This was a great basic recipe. I did not try it as suggested, but made some changes. I squeezed one whole lemon onto the chicken and quartered another--stuffed half into the chicken and dropped the rest in the pan. I didn't have a real roast pan, so I cut thick onion rings to raise the chicken in my 9"x12" baking pan. I cut the remaining onion into big pieces and scattered it in the pan. I ignored the time and went only by the thermometer. I also used way more than 1 tbs of onion powder. And of course, when butter is an option, it's the only option for me! The chicken was super moist and the meat fell off when we tried to break the legs off. Fantastic as leftovers too. I used the drippings on red skinned mashed potatoes. The lemon adds a great kick--I imagined that the flavor would have been too bland otherwise.

Soft Chocolate Cookies

I follow the recipe to a T but also add 1 cup of chocolate chips. The cookies are soft and chewy--almost like brownies, and are a great chocolate cookie option for people who don't like the typical vanilla/nutty/spicy sweet holiday flavors. Everybody LOVES these.
