This recipe was absolutely delicious! I didn't have toothpicks or anything to hold the stuffed chicken closed, so I just put the chicken in a 13 x 9 pan, drizzled it with olive oil and lemon juice, then put the spinach stuffing on top. It took less prep time and less cooking time, which made it more convenient for me! Of course, it loses something in the presentation when prepared this way. The only thing I might do next time is to double the amount of stuffing mixture because that's the best part. (I ripped up the bacon and threw it into the stuffing mixture since I wasn't wrapping it around the stuffed chicken.)
