Easy Lemon Cookies

Reviewed: Feb. 2, 2014
My son requested a "lemon dessert" today. When I found this recipe, I was unsure if it'd work because I had to modify the ingredients based on what I had in the house. I used a regular YELLOW CAKE MIX and the ZEST & JUICE OF ONE LARGE LEMON (in place of a lemon cake mix and lemon extract). I kept the other ingredients the same. It actually turned out really lemony and delicious! Thanks for the idea!

Chocolate Covered Strawberries

Reviewed: Sep. 4, 2009
I used 2 bags of chocolate chips (12 oz each)- 1 milk choc and 1 semi-sweet. I slowly microwaved them at 60% power, stirring every 30-40 seconds. Once they started to melt, I mixed in 2 tbsp canola oil. Once the chocolate had melted and was creamy, I dipped the washed and thoroughly dried strawberries in and put them on wax paper. They took about 30 or so minutes to set in the refrigerator. I easily covered three 16oz boxes of strawberries and could have covered more. Easy and delicious!

Cracked Sugar Cookies I

Reviewed: Jun. 10, 2007
Easy, yummy cookies. I gave the kids a shallow bowl for them to shake a variety of colored sugars/ sprinkles into. Then they rolled the balls in sprinkles before we put them on the cookie sheets. Definitely made it more fun for them and the cookies turned out pretty!

Awesomely Easy Sesame Asparagus

Reviewed: May 31, 2007
I make asparagus this way all the time, but by GRILLING it without the sesame seeds. Toss asparagus with olive oil and kosher salt, then throw on the grill. When it's done, I sometimes throw some freshly grated parmesan on top.

Tomato Basil Couscous Salad

Reviewed: May 31, 2007
I made some minor changes and this still turned out really well. It was super easy also! I used quinoa (prepare 1 cup quinoa in 2 cups broth), regular vine-ripe tomatoes (not plum or cherry as the recipe states), and maybe about 1/2 cup of green onions, and probably about 1/4 tsp or more of fresh ground black pepper.

Vegetarian Four Cheese Lasagna

Reviewed: Dec. 31, 2006
Thank you so much for this recipe! This is one of the best things to come out of my kitchen ever! I used butternut squash instead of pumpkin because I couldn't find pumpkin. Plus, Trader Joe's sells the fresh squash already cut, so it saves on prep time. I also used a little less feta (6 oz pkg). I used Barilla no-boil lasagna, which worked great. It turned out so delicious!

Pasta Bake

Easy! Tasty comfort food. I followed others' suggestions and used fresh mushrooms, garlic, and some shredded carrots. Made one for me and one to give to family going through an illness. Thanks!

Broiled Tilapia Parmesan

Reviewed: Feb. 21, 2004
Very easy and tasty! I melted the butter as someone else had suggested. I was surprised that so many recent reviews said they had leftover sauce because I did not. In fact, next time I'll probably double the sauce to have enough for the rice and vegetable sides I made.

Spinach Stuffed Chicken Breasts

Reviewed: Jul. 2, 2003
This recipe was absolutely delicious! I didn't have toothpicks or anything to hold the stuffed chicken closed, so I just put the chicken in a 13 x 9 pan, drizzled it with olive oil and lemon juice, then put the spinach stuffing on top. It took less prep time and less cooking time, which made it more convenient for me! Of course, it loses something in the presentation when prepared this way. The only thing I might do next time is to double the amount of stuffing mixture because that's the best part. (I ripped up the bacon and threw it into the stuffing mixture since I wasn't wrapping it around the stuffed chicken.)
