Creamy Coconut Cake

Delicious. Baked it in two 9 inch round pans,poked lots of holes with a skewer and poured condensed milk/coconut cream mix over hot cake. It was very similar to tres leches cake.

Scalloped Potatoes and Onions

Easy to prepare and delicious. I only had one cup of broth so I used milk for the remaining liquid. It turned out fine. The only bad part is having to wait two hours before I can eat it! It's worth the wait though.

Baked Custard for Two

The comments about the custard being "watery" made me decide to try omitting a few tablespoons of milk. The texture was just right and I thought it was delicious.

Nannie's Hot Milk Sponge Cake

I baked this cake in two 9 inch rounds to make a strawberry shortcake for my family and everyone agreed it was delicious. I also reduced the sugar to 1 cup and it was plenty sweet. Make sure to grease your pan because the cake does stick to it.

Key Lime Pie I

I used bottled lime juice and pressed the graham crumb crust only into the bottom of my pie dish to save time. Everyone loved it, I'd definitely make this again.

Exceptionally delicious and picture perfect. The only changes I made were to reserve a little of the syrup and brush it on the lattice-top (made it crisp) plus a sprinkle of cinnamon.

Cochinita Pibil

Made this the other day and invited a couple of friends over to enjoy it with me and my boyfriend. Used the exact ingredients specified in the recipe - achiote paste is easy to find in San Diego CA ;), marinated overnight, placed in a slow cooker on low the next morning then came home to a wonderful meal at the end of the workday! Everyone LOVED it and agreed that it tasted just like the dish served at Casa Guadalajara in Old Town. Served with Mexican rice, flour tortillas, mango salsa and lime slices. Will definitely make again

Sassy Chicken Enchilada Dip

I served this dip at a get-together last week and everyone loved it. The only changes I made were to leave out the oregano (didn't have any) and used plain diced tomatoes with a diced fresh jalapeno. Made it the night before so the flavors could blend and served cold with tortilla chips. Mmmm

Salmon with Lemon and Dill

I needed a quick and easy recipe and this fit the bill. Used a few tablespoons of olive oil instead of butter, a few teaspoons of lime instead of lemon juice, and fresh pressed garlic instead of the powder. Healthy and delicious.

Sweet buttery goodness. I spooned this over Old Fashioned Apple Dumplings (featured on this site) instead of the white-sugar syrup from that recipe because I wanted something richer. Thanks!
