About this Cook
I am a full-time teacher, a highly creative individual, and have a food-picky husband, so I've lately been enjoying the challenge of creating easy, healthy meals that my husband will enjoy. We have switched to light dinners, so most of my meals posted here are light and feature vegetables.
My favorite things to cook
I looooove baking, but do not love the weight gain that comes with it, so I save the cookie baking for the holidays when I can give away all my treats to get them out of the house. I most recently have found creative outlet in creating soups, though I love cooking anything delicious that doesn't stink up the house with smoke or fishy-smells!
My favorite family cooking traditions
My mom and sisters and I always baked tons of cookies for Christmas, and I still try to invite people over to bake and decorate cookies with me as part of the holiday festivities.
My cooking triumphs
Definitely pleasing my husband! He says I get the least-picky version of himself now that he has broadened his culinary horizons, but he still has quite a few quirks that I continue to discover and work around. I suppose it is preparing me for picky children! I love the challenge and I love my husband, so I'm happy to do it :)
My cooking tragedies
One side effect of being highly creative is that sometimes the risks don't quite turn out how you'd expect. My most glorious fail has to be when my creative sister and I decided to try our hand at inventing red velvet cupcakes...we ended up with Chocolate Beet Bran Muffins. They were pretty good as far as chocolate beet bran muffins go, haha....and we did invent an amazing cream cheese frosting using peach rooibos tea steeped in I suppose it wasn't a total failure. AND, we got a great story out of it that still makes us double-over with laughter.
