Mary's Cheesecake

I did not have a pan big enough to do a water bath, so I braved it without one. Alas, my cheesecake cracked, but when the pieces were cut, who could tell? It was delicious, and I received many compliments on it!

Three Cheese Baked Pasta

I did not have provolone, so I used what I had--sharp cheddar. Also, I had no meat on hand, so I left it out. Even with these changes, the dish was still very good! And EASY!!! And quick!! Sour cream makes it!

Easy and Delicious Chicken

I finally found a truly easy, truly tasty chicken dish!! My whole family liked it. I made these changes: I cut the breast halves in thirds, put them with the salad dressing in the crock pot and cooked on HI for about five hours. Also, I did not shred the chicken. I used hot chicken broth, and I added the cream cheese mixture to the crock pot and left it on high for only about thirty minutes. It was great and so, so easy!

Pumpkin Roll Supreme

My whole family loved this! I greased my pan with cooling spray, and the cake stuck a bit. So next time I'll know to grease the pan with shortening. I baked it for 15 minutes at 325--but I think 300 might have been better because it was still almost overdone on the edges. All in all, it was wonderful!

Carrot Cake VIII

We thought this cake was fabulous. I made these alterations: I used two cups all purpose flour and one cup whole wheat flour, and this seemed to make the cake more dense--something I really liked. Also, I used low-fat cream cheese for the icing. Since this made the icing rather thin, I refrigerated the cake after frosting it, and it was fine.

Tex-Mex Corn Chowder

My husband, who loves Mexican food, went on and on about this soup. He couldn't get enough of it! I, who like Mexican food, thought it was very good, though just a tad too hot for my taste.

Barbecued Beef

I didn't have a roast, but I did have about 4 pounds of ground beef. So I browned the meat, drained it, and put it in the refrigerator until the next morning. Then I combined the meat with the rest of the ingredients and left it all (plus about 1/2 cup water) in the crockpot on HI for about five hours. It could have gone for 4 hours, probably. It made wonderful Sloppy Joes for lunch after church. It's going to be a staple around my house from now on!

Modenese Pork Chops

I found that the cooking time was too long, so I would advise using a meat thermometer and check the temperature five or ten minutes after adding the wine and other ingredients. (Pork should be about 145 degrees, I think.) I didn't have wine, so I used 1/4 cup white wine vinegar with 1/4 cup water instead. Also, I added a couple of three-inch pieces of fresh rosemary instead of ground. Wonderful recipe!

Chocolate Pound Cake III

If I could give this cake SIX stars, I would! It is wonderful. The texture reminds me of chocolate cheesecake. It is easy to make, and it's inexpensive, too.

Sweet and Spicy Stir Fry with Chicken and Broccoli

This was wonderful. I did make a couple of changes, though. I used asian chili sauce instead of chili paste, and I used two teaspoons of it since I didn't know how hot it would be. I left out the crushed red pepper. Also, I cooked the broccoli in less water and for a shorter time than the recipe directs, and it was perfect. I'll be making this often!

Broccoli Cheese Bake

My whole family loved this. I used about 2/3 the amount of butter called for, and it still tasted nice and rich. I think I'll double the recipe every time I make it so we can have plenty of leftovers!

Spaghetti With Marinara Sauce

I loved this. I did increase the sugar since I like a sweeter sauce, and I increased the oregano and basil a lot. I make this in huge batches and keep it in the refrigerator for spaghetti, pizza, and on heavily toasted, thick slices of homemade whole wheat bread, with Parmesan cheese sprinkled on top--that's our favorite.

Chocolate Cream Pudding

The best pudding I've ever tasted! You do need to be careful in adding the egg yolks, which the recipe does not tell you, by adding a little bit of the hot pudding at a time (stirring vigorously) to the egg yolks until the eggs yolk/pudding mixture is warm, then adding it all to the hot pudding. I used two parts half and half and one part skim milk for milk it called for. Also, I added high quality vanilla from the Dominican Republic, which gave it a slight coconutty flavor. It was unbelievably good.

Good Chocolate Pie

Great pie!! It reminded me a lot of the other recipe I have that uses sweetened condensed milk and unsweetened chocolate. But THIS pie is way cheaper and it's so easy to make! A great find!

Curry Chicken Salad

Oooh, this is good! Since I had no dill pickle relish, I added chutney, and since I had no green onions, I chopped up regular onion instead. I cut the chicken into one inch pieces, which was really too big, I think. Smaller pieces of chicken can take in the flavor of the salad more readily.

Pesto Spaghetti Squash

Really good! I used spinach since I had no kale, and it worked well. Also, I had no garlic salt, so I used 1 teaspoon minced garlic and a little more than 3/4 teaspoon salt. Next time, maybe I'll have the mushrooms and can add them!
