Enchiladas Verdes

Surprisingly good. There are many food allergies in my household (onions, wheat, dairy...), so I made a few modifications. We cannot eat store cooked chicken, so I slow cooked a grass fed beff roast in the crockpot with homemade abode sauce, cilantro, cloves, bay leaf, and homemade veggy stock. I also substituted GF brown rice tortillas for flour. Served with vegan parma and soy-based sour cream.

Roasted Rack of Lamb

Second time having lamb (first time was awful) and this recipe was great. We have food allergies, so I had to make a couple substitions: Chex rice in place of bread crumbs, omitted garlic, used aged balsamic vinegar in place of mustard. The lamb was a little too pink for me, so I seared the individual chops on the stovetop after baking.

Quinoa and Black Beans

Love this recipe, but had to make several change because of food intolerences. No onion, garlic or corn; replaced them with chopped sunchokes (onion like texture) and broccoli. Quinoa is a staple in our gluten free, dairy free household - very filling and microwaves well the next day for lunch.

Alex's Raw Chocolate Pudding

Being wheat, dairy and sugar free can be challenging when it comes to dessert, but this recipe was great - even a hit with serious pudding eaters. Thank you for sharing. For a whipped topping, you could chill a can of whole, organic coconut milk in the fridge overnight and then, whip the cream at the top with a few drops of stevia or other natural sweetner.

Cajun Style Blackened Snapper

Very good, spicy fish. I omitted the onions and garlic because of a food allergy and they weren't missed at all. If your snapper has skin on one side, cook it skin side down first. I also used vegan butter since we are dairy free. Looking forward to making it again.

Pan-Seared Tilapia

Great recipe. I did make a couple of changes because of wheat and dairy intolerances. Instead of flour, I crushed up rice Chex cereal and instead of cows milk butter I used vegan, soy free butter. The Chex gave the fish a great crunchy texture. I also sprinkled one side of the fish with paprika.

Zucchini Risotto

My husband is intolerent to wheat, cow's milk, and onions and I'm sure he's not the only one out there, which is why I decided to write this review. I made a few modifcations to the recipe so he could have it. First I made my own broth (good luck find pre-made broth with no onions), then substituted sunchokes for the onion, and used a vegan, non-dairy cheese in place of the cow's milk cheese. I have to say the end results was good and for those who are custom to eating non-dairy cheese it won't be bad. For those who haven't eaten non-dairy cheese, well all I can say is, be open minded.
