Death by Chocolate

Rich and good for a chocolate fix! I used a mixture of crushed peanut & peanut butter m&m's instead of the toffee bars for my peanut-loving husband.

Cranberry Cheese Bars

I used raspberry preserves instead of the cranberry sauce (didn't add cornstarch or brownsugar), and it was a very good flavor. the bottom crust was a little crumbly at first, but the more it sat in the fridge, the better these bars seemed to hold together. I also drizzled semi-sweet chocolate mixed with a little espresso over the bars in a criss-crsos pattern, very pretty and very yummy!

Honey Carrot Cake

This was excellent! the pineapple made it really moist, and it was just the right sweetness. I actually used 1/2 cup maple syrup and 1 cup of honey, and it turned out really nice. frosting is wonderful also. very simple and easy to make in very little time!

No Bake Chocolate Oatmeal Cookies

SOOO good for a non-sugar recipe--always lookin for those! they really satisfy your chocolate craving. i used melted butter instead of vegetable oil, and they set up nice. check out the pie recipe i made up using this cookie recipe!! (Huckleberry Icecream Pie)

Coconut Chocolate Dream Pie

So good! I changed a couple things, but for my brothers that are tofu-haters, they couldn't even tell, and loved it. I used choc. soymilk, less almond extract, and didn't have oj concentrate, so used a strawberry/banana/orange juice concentrate instead. also topped it with whip cream lightly sweetened with about 2T honey.

Zucchini Oatmeal Cookies

these cookies were kind of hard to get off the sheet, might want to grease it really well...also was pretty flat and fell apart. i substituted chocolate chips for the nuts, and left everything else the same. flavor was really good, just need to figure out how to keep it together!

Creamy Chicken Lasagna

I made this for my new guy roomates, and some girl friends...they ALL loved it, and it was gone fast! I doubled the recipe and used a 9x13in pan, and it worked out great. The only thing was that it didn't set up very well...kind of sloppy and mushy, but still tasted great! Also added some italian seasonings and parsley to the chicken/cheese mixture, maybe next time will try spinach also!
