Broiled Tilapia Parmesan
I made this recipe using basa instead of tilapia, low-fat mayo, and celery seed instead of celery salt. It was delicious and both of my teenage girls loved it!

Ginger Glazed Mahi Mahi
Just made this for dinner tonight! Omitted the salt and omitted the oil from the marinade. I added a little extra ginger and a little Thai chili sauce, after reading the suggestion in other reviews. I also used salmon instead of mahi mahi and baked it for about 15 minutes at 400. We like our salmon medium rare. It was absolutely delicious!

Quinoa and Black Beans
WOW!!!! This recipe is amazing! Even my boyfriend loved it! I did make a few changes - I used red quinoa, only one can of beans (rinsed to get rid of the sodium), no corn (all starch, no nutrition), and no sodium chicken broth. I added some chopped orange mini bell peppers to the onion, sautéed, added the garlic, sautéed a little more, added the seasonings ( a tiny extra cayenne and only a tiny sprinkle of salt, some black pepper, and the amount of cumin called for). I stirred with the seasoning, added the quinoa and cooked a little more, then added the beans and the chicken broth. I prefer the beans cooked more rather than added at the end, but they absorbed some of the liquid so I had to add some more broth for the quinoa to cook enough, but in the end, I had an AMAZING dish! I served it with skinless boneless chicken breasts that had marinated in olive oil, balsamic vinegar, and basil, and then cooked it in a sauté pan with no added oil. The balsamic kind of burned and blackened the chicken and it was delicious!
