Never thought to thank you for this wonderful recipe . . . I recently changed computers and had it on the old desktop (no printer) and was stressing about finding it again. I hate when people change recipes, but . . . I recently made LEMON marmalade and am going to try it with that. Although, I probably shouldn't tinker with perfection . . . .

Tzatziki Sauce (Yogurt and Cucumber Dip)

Freezing and then thawing the yogurt first makes it much faster to drain; I use a coffee filter over a strainer and it takes maybe an hour to drain--it comes out like thick Greek yogurt (even when I use nonfat yogurt). Also, I use an immersion blender instead of grating the cucumber and just blend it all together.

Wheat Crackers

I agree, this is a great basic and forgiving recipe. In rolling it out, I put parchment paper on the cookie sheet, then piled the dough on (I got four cookie sheets worth), put waxed paper on top of it, and then rolled. The crackers were uniformly thin and I didn't have to deal with the usual rolling-out mess. I am a new and ardent devotee of parchment paper!!

Raspberry Lemonade Biscotti

I have to agree--I couldn't taste the raspberry or lemon flavors (after reading the reviews I added extra raspberry syrup and a few teaspoonfuls of lemon juice). I think if I did this again, I would opt for the raspberry extract and not waste fresh (and EXPENSIVE) raspberries in this. However, I absolutely loved the base recipe. I have been experimenting with biscotti recipes and this one had a wonderful texture and wasn't too sweet or soft or hard.So, I'll definitely make this again, but play around with other flavors.
