Cabbage Burgers

Back in Nebraska, we call these Runzas. I add a lot of pepper and paprika. My mother also throws in some bacon, sauteed mushrooms and swiss cheese. My grandmother adds Velveeta. You can add more flavor by adding sauteed peppers or adding chili pepper. These freeze really well. If you're ever in Nebraska, you can try all the varieties at the Runza restaraunts.

Ibby's Pumpkin Mushroom Stuffing

I doubled the mushrooms and my pumpkin bread and walnuts in it which made it even better. My boyfriend who doesn't really like stuffing or things that are sweet ate almost half the batch by himself. I'll be making this again! Though I recommend making a more traditional stuffing for those who don't want something sweet.

I added some onion and boiled egg, but omitted the dill (I didn't realize I was out of it until it was too late!). I'll be adding this to my regular rotation!

Pumpkin Chili

This was an amazing way to use the leftover pumpkin from my pumpkin pancakes. I added some cumin and nutmeg and a little more pumpkin than the recipe called for. I didn't have kidney beans or green peppers or pumpkin pie spice, so I used black beans, a red pepper and a combo of cinnamon, ginger, and allspice. My boyfriend has requested that I make it again soon.

Marinated Veggies

I make this for every bbq and I'll even broil it if the weather isn't cooperating. Just be sure to slice your veggies fairly thick so they don't fall through the grill. My vegetarian friends never feel left out of bbq and the carnivores love it too.
